Mine are always dry. Am I overcooking them? I also buy in bulk & freeze them. Is that why they're dry?

Gingered Pork Chops in OJ INGREDIENTS * 1/4 cup all-purpose flour * 2 teaspoons ground ginger * salt to taste * 1/2 teaspoon ground black pepper * 4 tablespoons olive oil * 4 thick cut pork chops * 1 onion, halved and thinly sliced * 1 tablespoon brandy * 1 1/2 cups orange juice DIRECTIONS 1. Preheat the oven to 350 degrees F (175 degrees C). 2. Place the flour, ginger, salt and pepper into a paper or plastic bag. Put the chops in the bag, and shake to coat. Heat oil in a frying pan over medium-high heat. Brown pork chops in the hot oil on both sides. Transfer the chops to a casserole dish. 3. Place the onion in the hot frying pan, and cook until limp. Pour the brandy into the pan, and stir to incorporate any bits of food that may be stuck to the pan. Pour the onion and juices over the pork chops in the dish. Pour the orange juice into the casserole as well. 4. Cover and bake for 45 minutes, or until chops are no longer pink. Serve with the orange sauce from the dish.

The best way to keep pork chops from being dry is to buy bone-in rib chops. For boneless chops, just dont cook them so long. Leave a bit of pink in the middle and you will be amazed how much better they are. Modern pork does NOT need to be cooked well done.

if they are dry you are overcooking them!! I just brown mine in frying pan and then put in casserole dish with mushroom soup and bake for 30-45 minutes....depending if you have lots or just a few. Thawing them first might help...because they will cook faster. Pork chops, like steak.....I think need to be cooked fast!

I brown them in a skillet and then put in a casserole dish, cover with chopped onion and a bottle of Heinz Chili Sauce and bake in the oven about an hour on 350. I serve them over cooked white rice.

One reason maybe is that you are overcooking them. One way of cooking porkchops is to first wash them in a egg wash, then lightly flour them. Pan fry over hot oil for about 3 mins each side.

I like to grill or pan fry mine. You're probably over cooking them if they come out dry. If you have them properly packaged, they're fine coming out of the freezer. If they have freezer burn on them, they've probably lost some of their juices and could be dry. Marinating them before cooking or grilling will also make them juicier. But they'll still dry out if you cook them too long.

I marinate mine in either italian dressing, or some other store bought marinade (lawrys makes several good ones) and then either grill them or cover them with foil and bake them, and for the last 10 min remove the foil and allow them to brown.

If you are pan frying them , use a little oil and a medium heat. Cover them to keep the moisture in and they should come out juicy.

Also once they are done, let them rest 5-10min. so the juices redistribute throughout the meat.
