It is up to the game developer as to the resolution they choose for a game.
There are 1080p games out there. Most new games will be 1080p.

The PS3 can run games up to 1080p. Not all games, especially the early (some say rushed) ones, have taken advantage of it.
720p is itself still HD, and still looks fantastic (i don't think the 360 can do any better, but i may be wrong)
Note. the upscaling the chap above is referring to is for the PS2 games and DVDs so they display better on a HD screen. It doesn't affect actual PS3 games.

Wtf are you talking about? All ps3 consoles support it.
They're even adding 1080p game upscaling.
