There are several possibilities why the muffins won't rise. As the person above me said, overbeating is one possible reason. You want to stir in the liquid just enough to moisten the batter -- a few lumps are OK.

Another reason could be that your oven temperature is hotter than the setting. In that case, the muffins rise quickly, then collapse. Use an oven thermometer to find out if the temperature is accurate.

If you're using a recipe that calls for raisins, nuts, or dried fruit, you could be overloading the batter. Too much of those items could be causing the muffins to collapse.

And a final possibility is that you're using too much baking powder and/or soda, or else you're using the wrong kind. Too much leavening will cause the muffins to expand too rapidly and then collapse. And you can't substitute baking powder for baking soda.

there are lots of reasons why. If you are using yeast, that could be old and bad or if it is good, you aren't using enough or it isn't rising because the room temperature is too cool or the water you mixed the yeast in wasn't hot enough. Even the oven temperature can play a part in the rising of them.

If they are made with baking powder or soda, then it may be bad or not enough or the oven temperature isn't right either. Sometimes the eggs can be bad so it effects the rising too. You can check to see if you have good eggs before using them very simply. Get a bowl of cold water making sure the bottom of the bowl is wider than the egg laying on its side, and that you have the water deep enough to allow the egg to stand up on end or float. Put one egg in the water at a time. If it lays in the bottom on its side it is very good. If it stands up on its end but is still touching the bottom it is still ok but use it soon. If it floats, throw it out. When baking, all your ingredients need to be as fresh as you can get them for the best turnout and they need to be measured correctly. Recheck your steps and ingredients and the temperatures on your oven and try again. That is all you can do. If you adjust everything and they still do not rise, then try a different recipe.

Poppy seed muffins are the easiest muffin to grow. Don't be afraid to water them generously. P.S. Muffins also need plenty of sunshine.

Rise is a better word. The don't because you over mix it. All you want to do is to combine the ingredients not beat the batter. Take your time and you will love the results...

You may have used too little or no baking powder or your baking powder was not working due to being stored where moisture could get in it. You may have mistaken baking soda for baking powder. You may have used too much flour or not enough liquid.

if the muffin does not rise enough raising agents was not added.
or the mixture was overbeaten,so it air is loss.
the recipe was not followed properly.

need a little more info, send recipe to wrcunningham37...I'll take a look at it and let you know what I think, owned a bakery for 5 years, quite versed in leavened breads, quickbreads, artisan bread so forth....
