SOUTH CAROLINA LOW COUNTRY BOIL (like a Southern version of New England Clam Bake)
In a large pot, bring salted water to boil. Add crab/shrimp seasoning like Zaiteran's or Old Bay.
Add potatoes in large chunks, a couple of onions in large chunks, let cook until half done. Add some corn on the cob and some smoked sausage or kielbasa cut into 1" chunks. When corn is done, add the unpeeled shrimp.
Cook only until the shrimp turn pink.
Drain, pour onto a table lined with newspaper.
Serve with saltine crackers, melted butter, cocktail sauce, lots of paper towels, beer, and hungry appetites.

Here's my Dad's "Enchilado de Camarones" (a cuban version of shrimp creole)

-Drizzle EVOO in the bottom of a deep pan or pot, and sautee, about 3 cloves minced garlic, a diced yellow onion, a finely chopped green pepper and about 3 tbsp minced parsley until soft. Add about 1/4 dry white wine and let the alcohol burn off, season with salt, lots of black pepper, about 2 teaspoons of Cumin and a tsp of oregano. (i like more oregano though). At the end add 2 whole bay leaves and a couple of dashes of hot sauce (if you like it spicy)..I also add a bit of crushed red pepper flakes (but my dad gets mad and says "that isn't cuban!" lol)

Once all is combined add 2 cans tomato sauce and let the flavors cook and blend. When the sauce thickens add about a pound of cleaned, peeled, deveined shrimp and cook for about 6-8 more minutes making sure the shrimp dont get chewey.

Serve over white rice. YUM!!!

Buy some cucumber, cilantro, avocado and lemons. You could also buy some crab meat, imitation is okay and affordable. A bottle of Clamato juice. Chop first 3 ingredients and place in a large bowl. Juice the lemons into the bowl. Pour in Clamato juice. Flake up crab if you bought some and add to bowl. Add salt and pepper maybe a little hot sauce. This dish is served cold. Eat with crackers of french bread or alone. Its the bomb....
