You can use nearly any type of cookie (gingersnaps, oreos, tea cookies, etc) and crunch them to use as you would graham crumbs. I very rarely use the graham crumbs called for because I find it more interesting to try other types.
As for a nice dessert, have you ever tried fruit pizza? Here is one type, but if you do a search you can find many other recipes. They look beautiful, and as though they took a long time to make, but they are very quick and so yummy!

I sometimes use vanilla wafers or chocolate wafers as a substitute for graham crackers, depending on the recipe.
As for fruit - a quick easy dessert is this:
Make a quick pastry cream out of instant vanilla pudding (only use 1 1/2 c of milk to make it so it sets up really thick) into which you fold 1 c to 1 1/2c whipped cream (not the stuff from a spray can...it won't hold up.)
Take a large Sara Lee Pound Cake and cut in bite sized cubes. Take fruit of your choice and cut it into bite-sized chunks. In a bowl put a layer of cake, a layer of pastry cream, and a layer of fruit - continuing on until you use everything up. If you want to you can drizzle liqeur or diluted juice over the cake when you are layering it for an extra level of flavor. I usually make this with stawberries and peaches that have been soaked in amaretto, then I drizzle the leftover amaretto from the soaking over the cake.
This is very light, summery, and not too sweet.

OMG where do you live? lol I don't know what to tell you without seeing the recipe first. As for your mom's cake....I just had this amazing dessert called a triple berry cheesecake. The base is actually made from vanilla wafers ground up and mixed with melted margarine/butter....a little more than your graham cracker crumb calls for....then 1 package of cream cheese with 1 cup sugar and 1 tub of whipped cream(thawed)...blend really good.....then spread over base....then put three kinds of your favorite berries sprinkled/scattered over the cream cheese mixture then mix a package of lemon jello but only 1 1/2 cups of boiling water not 2 let cool till not warm....not gelled though and pour over top of berries and then put in fridge until set!! OMG........sooooo good....if your mom loves fruit stuff, she will love this!! Good luck! Or if you have the chocolate cake baked already......you could just add whip cream and canned cherriy pie filling for a black forest kinda cake!

I live in the UK, and there are no graham crackers here. I use digestive biscuits instead. I assume it would work in eclair cake, which I have also had. Why not just serve some really nice fruit salad, like peach melba or ambrosia?

Since she loves fruit, how about making a trifle with her favorite fruits?
1 store-bought pound cake
2 packets of custard or pudding mix (see note above)
2 bags, 1 lb. each, frozen fruit or equivalent sliced fresh fruit
1/3 C sugar (more or less to taste)
1 1/2 C heavy cream, whipped (or to save time, use whipped topping)
additional fresh fruit and mint leaves for garnish
1/3 C sherry or other liquor (optional)
Prepare custard or pudding mix according to package instructions. Let cool completely.
Mix fruit with sherry. If you don't want to use alcohol, use a little water or juice instead. You want the fruit to be sitting, but not swimming, in a bit of sweetened juice. Some people like to really soak the cake in the alcohol, then add the fruit on top. I think this can tend to make the cake too soggy, so I prefer less. Whip the cream.
To assemble:
Trifle is very forgiving, it takes no effort to make it looks great! If you don't have a trifle bowl, use any large glass bowl. It doesn't technically have to be glass, but it looks prettier if it is. You can also make individual servings by placing the layers in large wine goblets.
Cut the cakes into large chunks and cover the bottom of your dish with a layer of cake. Top with a layer of prepared fruit, then a layer of custard. Repeat the process until you are out of ingredients or the bowl is full. Top with whipped cream and garnish with fresh fruit. Chill until serving time.

first of all, any plain (unfrosted, unfilled, and solid ) cookie {biscuit} could substitute for graham crackers - you don't want chocolate chip, oreos, or the like for the base of your eclair cake (it's a refrigerator cake, isn't it?)
now, for your mom's birthday, you could do a trifle, a fool, or even a pavlova. you'd make meringue (beat egg whites stiff, with confectioners sugar), spread that onto a lined baking pan, in a circular mound, denting the center. bake in a low oven (160*f) for 45 minutes, and then turn off the oven, leaving the meringue inside, until cold. remove from baking sheet, and fill the hollow with a fruit mixture (whatever fruit you like, with or without sugar), and top with whipped cream (or whipped topping)

I don't know about the grahm crackers...
but...
for the cake: instead of frosting, use chocolate pudding. You can use less water to richen the pudding, or just buy instant chocolate mousse mix, and use that instead. Then decorate the top and sides with rasberries, strawberries, and blueberries. Bananas could also be acceptable.
trust me, it's delicious.
