Are there any other insects or animals that can produce honey or any other substance like it that can be harvested?

Yeah I know about sap from trees. Im talking about animals and insects...Guano is bat crap so that dosen't count.

Some ants harvest excretions from other bugs, some plants make nectar to attract bugs to help cross pollination, trees make sap which you enjoy on your pancakes. All plantlife creates its own food through photosynthesis.
