Great question!!
You should also add that if god was all knowing, why is it that he didn't know that adam wouldn't fancy any of the animals!?
According to the bible god gave adam a choice of all the animals he could..... "mate" with..... and he didn't like any of them so after naming every animal on the planet eve was created for him. Wouldn't god know ahead of time that adam would not want an animal as a sex partner? I mean seriously.... how can people buy into this B.S?

WOW! Do you ever need to get a grip. Have you ever read the Bible version of creation? Genesis 1 says God created male and female and instructed them to be fruitful and multiply(have babies).
The "one single guy" in Genesis 2 is a totally new race called the Adam-kind and he was "formed" from the dust of the earth...not created from nothing like the others races of mankind. Eventually God gave Adam a wife and they had children. God does not skip any details. And yes, HE knows everything.
The Bible is a "Reader's Digest" version of history and science. People have hard enough time understanding it, just imagine if God gave us every little detail.

Plot weaknesses such as those you've described suggest the author's main interest in the first chapter was introduction of the primary character without any attempt to flesh out the lives of the strong, though secondary characters.
In fact, there's reason to suspect the first chapter was initially created by the author as a back-plotting effort, then afterward thrown in without careful planning and re-writes. Possibly an agent or potential publisher demanded the introduction of a new chapter 1, or major modifications in an older one, to support later plotline developments.

I belive he allowed Adam to see for himself that he was lonely and needed a mate. It was during his naming the animals that he realized all the animals had a mate and he was the only one without. We appreciate things more if we want/desire them instead of someone saying here it is. When we long for something it's value is higher to us, we are most likely to treat it better, and we know what it was like before when we were without it. There was purpose in it.

This is a good question that most believers of the bible can't answer without pulling out the old "man cannot know God's reasons" or "man cannot comprehend God's ways" I think many believers will either skip this question altogether or try to use some kind of faulty reasoning to answer it.

Good question :-) Seems like creating Eve was a bit of an afterthought, if you believe Genesis.
