use regular milk. you need the fat from the milk to make the buttermilk go well. also, you can use lemon juice if you don't like the smell of the vinegar. ot will also separate the cream from the water.

You can also use soymilk at a 1:1 ratio to produce "buttermilk" if you're baking for someone who doesn't consume dairy.
