CHICKEN EMPANADAS
3 cups chopped, cooked chicken
1 (8-ounce) package shredded Colby and Monterey Jack cheese blend
4 ounces cream cheese, softened
1/4 cup chopped red bell pepper
1 jalapeno, seeded and chopped
1 tablespoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (15-ounce) package refrigerated pie crusts
Water
DIRECTIONS
Preheat oven to 400 degrees F. Lightly grease a baking sheet. In a large bowl, combine the chicken and next 7 ingredients. Unroll 1 piecrust onto a lightly floured surface. Roll into a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining piecrusts, making 12 to 15 circles total. Arrange 1 round on a clean, flat surface. Lightly brush the edges of crust with water. Place 1 heaping teaspoon of chicken mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and chicken mixture. (Up to this point, the recipe can be made ahead and frozen for up to 1 month). Arrange empanadas on the prepared baking sheet. Bake for 15 minutes.
POTATO NACHOS
1/2 (22-ounce) bag waffle fries (recommended: Ore-Ida)
1 (16-ounce) can black bean refried beans (recommended: Rosarita)
1 cup Mexican style shredded cheese (recommended: Kraft)
1 (2 1/4-ounce) can sliced black olives (recommended: Early California)
1/2 cup mild chunky salsa (recommended: Pace)
1/2 cup sour cream
DIRECTIONS
Preheat oven to 400 degrees F. Place a sheet of tin foil on a baking sheet. Place individual waffle fries on the sheet and space evenly. Using oven mitts, place the baking sheet in the oven and bake fries for 18 to 20 minutes. While the fries are baking, open the can of black beans using a can opener and spoon into a microwave-safe bowl. Cover the bowl loosely with plastic wrap and microwave on high for 4 to 6 minutes. Using oven mitts, remove the fries from the oven and let cool about 5 minutes. To assemble, evenly space the fries on a microwave safe plate. Top each fry with 1 tablespoon of the heated beans and then sprinkle with the cheese and olives. Put the plate in the microwave and heat on high for 1 minute, or until cheese is melted. With oven mitts, remove the plate from the microwave. Top each fry with 1 teaspoon salsa and 1 teaspoon sour cream.
MINI CHEESE AND OLIVE CALIZONES
1/2 cup ricotta cheese
1/4 cup shredded Mexican cheese blend
1/4 cup chopped black olives
1 teaspoon Italian seasoning
Flour, for dusting
1 (8-ounce) can refrigerated crescent-shaped dinner rolls
Preheat oven to 375 degrees F.
In a medium bowl, combine cheeses, olives, and Italian seasoning. On a floured surface, unroll crescent dough in 1 piece. Roll out to a 16 by 8-inch rectangle. Using a pizza cutter, slice into 8 (4 by 4-inch) squares. Place 2 tablespoons of filling on half of each square. Lightly moisten the edges with water, fold dough over, and seal, pressing with fork tines. Using the points of the fork, pierce vents into top of each calzone. Place on a greased baking sheet and bake for 20 minutes or until golden. Serve hot.

Recipe #1
Grilled Taco Nachos
INGREDIENTS:
2 bags tortilla chips (that should be enough for a few people.)
2 pounds bulk pork sausage and/or 2 pounds ground beef / poultry of your choice
2 cans Old El Paso® chopped green chiles, drained
4 teaspoons Old El Paso® taco seasoning mix
3 tomatoes, chopped (1 1/3 cups)
4 medium green onions, sliced (1/4 cup)
4 cups finely shredded Colby-Monterey Jack cheese
PREPARATION:
1. Set stove burner to medium to medium-high heat and plop a frying pan of your choice (obviously, it's your frying pan)
2. While waiting for the pan to heat up, if you have any, get out some dishes with at least a height of an inch. If you don't have any dishes like that, just use tin foil and create some.
2.5 . I forgot to put this step when I was done, but it is important. Preheat oven to 350*.
3. In frying pan, cook sausage and / or ground meat until most of the pieces are brown, but some are still trying to cook.( ya know so some of the pieces are still pink.) Drain about half of the liquid from the meat and add the seasoning mix and the chiles. Stir.
4. Going back to the dishes you pulled out earlier. Spread out a layer of the tortilla chips in each dish. Then pour your meat/chile mix over the nachos. Sprinkle cheese over chips and meat.
5. Add another layer of chips, then meat/chiles, then cheese. Only add another layer if you can.
6. Stick up to two dishes at a time (unless you have two racks in your oven, then you can fit two on each rack.) in the oven and cook for about 8-10 minutes.
7. You dont have to wait for it to cool, so make the nachos about 20 minutes before you want to eat them.
Ok, this one's shorter. Remember to start this a little over an hour and a half before you want to eat it.

Ugly Dog Chili
I don't know the origin of the name ...
INGREDIENTS:
1 pound red kidney beans
1 pound sirlion, cubed and browned
1/4 cup olive oil
3 chopped onions
2 fresh jalepeno chiles minced
6 garlic cloves
3 tbl. chili powder
1 1/2 tbl. ground cumin
1 tbl. dried oregano
36oz. chrushedplum tomatoes
5 cups stock
2 large yellow peppers chopped
3 teaspoon salt
1 package frozen corn
PREPARATION:
1. Brown the beef.
2. Saute onions, peppers and garlic until soft.
3. Add tomatoes, beef, beans and stock, then bring to a boil. 4. Reduce heat, then simmer for one hour.
5. Add corn and salt & pepper to taste, cook additional 30 minutes.
There yah have it. A nacho dish and a chili dish. And for drinks, you got the beer.

Quick and Easy Nachos
1 bag tortilla chips (restaurant style, no seasoning)
Cheddar Cheese
Mild Green Taco Sauce
Hot Red Taco Sauce
Extras (see below)
Put a handful of tortilla chips on a paper plate, then shred cheddar cheese all over them. Pour taco sauce (both kinds) over the cheese and chips. Cook in microwave until cheese is bubbling. Serve hot.
If you want something extra to go with it, add browned ground beef on top of cheese / taco sauce mix. Or top the finished dish with jalopena peppers. Want it hotter? Top it with HOT salsa! Nothing says you can't top the cooked platter with sour cream, pico, or guacamole either!
The dish is really easy, really fast, really good, and really easy to customize.

2 c. chopped, cooked chicken
1/2 c. Miracle Whip salad dressing
1/2 c. chopped, pitted ripe olives
1/2 c. (2 oz.) shredded sharp natural Cheddar cheese
1/4 c. chopped green pepper
1/4 c. chopped onion
6 croissants, split
Lettuce
Combine chicken, salad dressing, olives, cheese, green pepper and onion; mix lightly. Chill. Fill croissants with lettuce and chicken mixture. 6 sandwiches. Excellent for a hot day!

You can have snack food like....
potato chips
quesedillas
nachos
sliced and cut-up vegetables with some type of dip.
You can make mozzerella sticks, or order a pizza. Make or get something that is easy. Otherwise you will miss the game, too much. Buffalo wings won't be bad. French fries are a possibility.

chicken wings.discard tips,separate at joint,little salt more pepper,put in pan with grate raising meat above bottom,cover with aluminum foil,cook on 350 for 2 or 3 hrs.then take foil off and broil to brown.watch so they don't burn,turn over after a few minutes,and done.use BBQ sauce at start if you like.

little smokies heated up in barbq sauce, velveeta rotel cheese dip (w/ 1/2 lb. of sausage) and tostadas to dip. hot wings, hershey kisses in a bowl for the sweet tooth or some cheesecake bites.

I think some RED potato SKINS would be appropriate.
You could cook up a bird too (Chicken will have to do since EAGLES are protected.)
You could make a GIANT bowl of chili too.
