Green Bell Peppers stuffed with Tomato Lentil Couscous

INGREDIENTS
3 green bell peppers
1-1/4 pounds ground beef
1 cup chopped onion
4 cloves garlic, minced
2/3 (16 ounce) jar chunky pasta sauce
1/3 cup chopped onion
2/3 (6 ounce) package tomato lentil couscous mix
5 ounces shredded sharp Cheddar cheese

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Cut peppers in half, place them in a 9x13 inch baking dish, and set aside. In a large skillet over medium heat, saute the ground beef for 5 minutes. Add 1 1/2 cups chopped onion, chopped green bell pepper, and garlic. Reduce heat to low, add tomato sauce, and let simmer while preparing the couscous.
Prepare couscous according to package directions, but add the remaining onion to the water before adding the couscous. When couscous is done, combine it with the sauce. Fill bell peppers with the mixture. Top each with shredded cheese.
Bake at 375 degrees F (190 degrees C) for 20 minutes, or until cheese is bubbly and slightly brown on top.

INGREDIENTS
6 medium tomatoes - peeled, seeded and chopped
1 medium onion, chopped
3 ribs celery, diced
1 (8 ounce) can tomato sauce
1 cup water
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
4 medium green peppers
1 pound lean ground beef
1 cup instant rice, cooked
1 teaspoon dried basil
DIRECTIONS
In a large saucepan or Dutch oven, combine tomatoes, onion, celery, tomato sauce, water, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to a boil. Reduce heat and simmer 10-15 minutes. Meanwhile, cut tops off of green peppers and remove seeds; set aside. In a bowl, combine ground beef, rice, basil and remaining salt and pepper; mix well. Fill peppers with beef mixture. Carefully place peppers in tomato sauce. Spoon some sauce over tops of peppers. Cover and simmer for 40-45 minutes or until beef is cooked and peppers are tender.

how about sausage and pepper bake?
Use smoked sausage, peppers, a few potatoes and carrots. All cut into bite size pieces, tossed in olive oil and herbs. Pile into a baking dish, cover with foil and bake at 400 for about 45 minutes until carrots are tender. Sprinkle with cheese and serve. This is really, really good.

I like the stuffed pepper idea, but instead of cutting the cap off you can slice them in half and make them open face. It keeps them from getting oil buildup.

Slice and sauté in a pan with some seasonings, soy sauce, onions, and shrimp (or chicken or beef). Serve over rice. It is really good and so easy. :)

slice them add some sliced onions and chicken strips and a packet of fajita mix and make chicken fajitas wrapped in tortilla shells. YUMMMMMMMO!!!!!!
