veggie lasagne is delicious and if you're clever no meat eater will ever know there's no meat in it. chunky vegetables like aubergine, courgette, carrot, with a nice spicy tomato sauce and good cheese, it's gorgeous.

One small bag of baby carrots
One can of corn (whole kernel, not cream)
4 potatoes, diced
half a bag of pasta (shell works well)
1 can kidney beans
salt
pepper
garlic salt
Put in a pot with water, cook on medium heat until carrots are tender

Feel free to add other vegetables, such as broccoli or peas, or just use a bag of frozen mixed vegetables or a can of mix vegetables.

Kerrywoman had a good idea, veggie lasagna. I make spinach lasagna, just substitute spinach for the meat. You can use frozen spinach but you need to squeeze all the water out of it before using or you lasagna will be watery. I use a home made bechamel sauce in mine or if I'm feeling lazy or in a hurry a jarred Alfredo sauce.

It's all good. I'm guessing you mean tasty/palletable.

Try this:

Thinly slice 1 white onion and put one table spoon of extra virgin olive oil in the pan and add onion. Stir to coat rings. Add zuccini or yellow squash that has been sliced thin or cut julienne. Set fire to low (little tiny flame) and cover for 10 min. Add salt and pepper to taste. You will love. You can do with carrotts and apples too. Remember, slice thin.

No, really- it looks odd to Americans in their McDonald's world, but it's really good!

Hello i am from south of France provence, and i suggest "courgettes sautées"
Olive oil in a pan
Chop the zuchinis
a little garlic,
salt and pepper
it is cooked in 20 minutes

spaghetti squash with meatless sauce

zucchini lasagna (the zucchini slices take the place of the pasta) with layers of riccota cheese, other veggies, and shredded cheese

corn salad (1 bag of frozen corn, or corn cut from the cob, 1 can of black beans-drained, any other small chopped veggies, 1 cup of salsa) mix together and eat chilled....very very good summer side dish!

It's endless what you can do with veggies:
veggies burger, veggies spaghetti sauce, antipasto with all veggies with an Italian dressing, salad, veggie soup with lots of garlic, Cajun FF, stuffed cabbage with the veggie spag. sauce and stuffed with the veggie burger, caramelized onions to go on top of the veggie burger, Crudite - platter of fresh veggies with assorted dips,
bean dip,
devil eggs stuffed with chopped veggies,
garlic mashed potatoes, cheese and veggie Quesadillas,
roasted veggies with garlic and rosemary,
stuffed mushrooms..........endless.
