There are 4 train lines in Thailand (North, East, South, Northeast). I plan to visit Thailand in 5 days while using the trains. I want to see something different of North America. I am a backpack traveler loving walking. Which line(s) should be the most exotic? Which cities to stop and walk around?

There are actually two train routes going north-east, so that makes it five major routes in total.

Most long-distance travellers (using the socalled "express" trains) thus travel evenings at night, e.g., leaving Bangkok in the evening and arriving in Chiang Mai or Nong Khai or Ubon in the morning. That way, you don't get to see much of the surrounding landscape.

Note that local (day-time) trains in Thailand don't go fast, so you really have to be patient, but it is a good and cheap way of getting to many small towns if you are in no hurry.

The north offers the most scenery (mountaineous). Although the towns and villages in the north-east are definitely something you will not see in Northamerica, they are probably not the place/direction to go if you don't speak the language.

East will not take you far.

The northeast route wil lead you through a plain (old seabed) which is brown and boring during the dry/cold season and green during the rice growing rainy season.

In my view, the southern route doesn't go through much exciting scenery, but the northern route does. And so does the short ride (west) from Kanchanaburi to the end of the line.
