Turkey has so much more to offer in all aspects...France is totally overrated. You should see both countrys if you have the opportunity...but I, myself would go to Turkey first.
Lots to see, experience, and tons of fun!

From your delema I understood that what you're looking for is a country with culture and historical monuments.
So, as an archaeologist I would advise you to visit Turkey, which offers you the opportunity to approach a cultural and historical continuation of 3.000 years' period.
Ancient Greek, Roman, Bysantine, and Ottoman monuments, in a territory which has been the crossroad of so many civilisations and cultural influences. In addition, the Aegean part of Turkey offers all the facilities for summer hollidays and beautiful beaches, and a chance to take an one day trip to one of the nearby Greek islands.
As for France, I guess you can visit it at anyother season of the year.

Turkey at the cross roads of Asia and Europe. You will be a far more well informed and culture rich on your return from the visit if you are not meaning simply a pleasure seeking trip.

What do you exactly want to know ?...
I am a Turk, and of course I love my country...
And I also love France, especially because I grew up and I live in this country...
If I had to choose, my answer would be "Turkey".
If you are talking about holidays, I suggest you to go to Turkey, especially at this period...
Go to Istanbul and the Aegean coast, and then you will be charmed , and when you come back to your homeland, you will probably turn into a new person... Turkey is just fascinating and magical...
Fatih, from Paris,France...

It depends on what kind of holidays you want, on what you want to see also.I have seen both countries, here is not comparison, other civilisation has France, other civilisation Turkey.(before putting the thumbs down, i speak in positive way).
There are people who love for example Asiatic countries, personally, i wouldnt go, because they dont represent my needs..
I would suggest you to visit both countries, and for the summer to prefere Turkey if you want sea, or entertainment, even if i would prefere for myself if i were you Turkey in winter. It is calmer, and the winter in France is heavier...

Flip a coin. Both are very excellent countries. Turkey has tons of culture and history, France has great sites to see. You have some great answers above, so I'd take a look into what they're saying.

I've been to both Turkey and France.
Turkey is rich with culture. You will enjoy the great museums and old mosques. The buildings are awesome. Scenary is amazing especially in Borsa. The food is really tasty.
France has many historical sites and museaums too. If you like shopping and theme parks this will be your destination not Turkey.
