I am planning a week holiday in October and want to go to the outback but don't want to just go to Uluru

Uluru is a 2 day (maximum) experience. Walking around it is better than climbing it, apart from the fact that the long term locals would prefer that you didn't climb it. Then a bit of time at Kata Tjuta (Olgas).

There is a loop that takes in Kings Canyon, Ormiston Gorge and a few other places on the way up to Alice Springs through the MacDonnell Ranges. Places like Palm Valley and Hermannsburg are on the way. Really worth seeing. In the next year or so l plan to return to the Centre, and this is what I will be doing.

Google Gunbarrel Highway tours and have a look there. The Gunbarrel Highway goes west from Uluru to Giles Weather Station just across the Western Australian border and then through Warburton to Laverton and Kalgoorlie. There are different tours taking different lengths of time. It doesn't get more outback than that.

Try Broome and go on a 4wd camping tour. I did a four day tour for about $800 including all food. The driver does all the work and you will see some of the most beautiful gorges and swimming holes in the world.
