Lots of places (islands) have ample activities to chose from.

I loved Moreton Island (short boat trip out of Brisbane) Enough to keep you busy for 2-3 days. Moreton Island has the Tangalooma Resort.
National Parks, HUGE sand dunes to slide down and you can feed some wild dolphins at night!

Otherwise The Witsundays - a collective of continental islands of various sizes off the coast of Queensland, Australia, situated between Townsville and Mackay and some 900km north of Brisbane. http://www.whitsundaytourism.com

Also Dunk Island is Australia's most beautiful tropical rainforest island. This island of peace and plenty offers an amazing variety of activities, facilities and experiences. Haven't been to this one personally .. (yet, maybe soon) but looks great. http://www.dunk-island.com/ or http://www.dunkislandresort.net/dunkisland_act.htm

There are the southern islands too like Rottnest off Perth, Kangaroo Island off Adelaide and Phillip Island near Melbourne. Then there is the island State, Tasmania, and the Bass Strait islands - King Is and Flinders Is. All offer scenery, wildlife and local industries to tempt anyone. They have beaches too but a lot more besides.

You would probably be looking mostly in Queensland. Lady Elliott island is different from most touristy ones. It has a set limit on how many people can visit at any one time, has amazing snorkelling and can organise all sorts of activities for you.

Fraser island is a 4WD paradise and great fishing as well as rainforest walks.

Any island though will ensure there is more to do than just lying around.
