We've made a topping for bruschetta with fresh roma tomatoes, olive oil, vinegar, and garlic. I'm wondering if it will do well if we freeze it. My husband says it will be nothing but mush when we thaw it this winter. Has anyone tried this with any success?

the olive oil will not freeze, you may be better off bottling it.

Sonds great, but tomatoes do not freeze well. Sounds so good, I'd have a hard time keeping it. Tomatoes are readily availible year round so why try to save it? Enjoy it now, put some in some nice bottles wrap with some colored saran wrap and ribbon and give to neighbors and friends. It will show off your skills as well as share the goodness of your harvest and your heart.

Hubby is right, tomatoes will be reduced to mush.
