Well the flat edge of the knife does work, I prefer using a garlic peeler. They are cheap and available at most kitchen stores (bed bath and beyond is where I got mine) It is a rubber tube shaped like a cannoli tube, you place the garlic clove inside and rub back and forth, and the peel comes right off, without having to crush the garlic clove. If the garlic clove will be chopped, place it on a cutting board under the flat side of a broad knife and give the knife a sharp whack with your free hand. You will be able to remove the peel easily, probably in one piece. If the cloves are going to be used whole, drop them in boiling water for a minute or two and they will peel easily.
Another option that came by way of a reader, is to drop unpeeled garlic cloves into a glass of cold water and let them sit for 1/2 hour or more. Our reader starts cooking by dropping a half to a whole head of garlic (separated into cloves) into the water. By the time she needs them, they "pop out of their skins almost as easily as blanched almonds." Slicing the top off the cloves works even quicker. She refrigerates unused garlic in the water for use the next day.

Take the cloves of garlic and pound lightly with the side of a knife. Most of the paper covering will be removed. Now just take the skin off.

Take a flat surface such as a chef knife and on the flat side wack the cloves of garlic. the skin separates and will peel easily off.

Slice off the top, where it attached to the bulb.
Place the clove under the blade of a chef's knife and hit the knife with the palm of your hand.
The garlic practically peels itself!

Hitting your hand against a knife is'nt very cool. Use a paring knife and cut off both ends of the clove and pull off the peeling with the edge of the knife and it will peel off around the clove.

take the flat side of a knife and place it against the garlic clove. With one hand holding the knife against the garlic clove take your other hand and push down on the flat side of the knife to "smush" the garlic clove. Remove the knife, and the clove should easily remove from the skin.

Just don't buy one of those garlic things that you roll the garlic in!!!! Just take your chefs knife, bang it on top of the garlic clove, and guess what, all the skin comes off!! Fast and cheap!!!

if you are only peeling one or two cloves, than just break one off, and take a large knife, turn it on its side and smash the garlic.
if you are peeling lots of cloves, take the amount needed in a large metal bowl and put plastic wrap on the top and shake vigorously
until peeled.

Cut the root end off. Lay the cloves on a cutting board and whack with the flat of a broad knife. The skin pulls right off.
