Nothing is allowed to be associated with Islam, no pictures or symbols and such. The only reason you see it so prevalent is because the moon is important in beginning and ending Ramadan. Ramadan is started with the sighting of the moon, and Eid, the holiday after Ramadan is as well. Also, there is a famous hadith relating to the moon, in which it is stated to be split in half once. It is not Islamically associated but has come to be, over time, known to be a part of things done within Islam. It by no means, is a representative of Islam.
"Among His Signs are the Night and the Day and the sun and moon. Prostrate not to the Sun and the Moon but Prostrate to Allah Who created them if it is Him ye wish to serve." (Qur'an 41:37)

Five pointed star resembles the five pillars of Islam. Crescent moon (Hilal) is connected to the monotheistic deity Allah.
The crescent moon & star symbol actually pre-dates Islam by several thousand years. Information on the origins of the symbol is difficult to ascertain, but most sources agree that these ancient celestial symbols were in use by the peoples of Central Asia & Siberia in their worship of sun, moon, & sky gods. There are also reports that the crescent moon & star were used to represent the Carthaginian goddess Tanit or the Greek goddess Diana.
The city of Byzantium (later known as Constantinople & Istanbul) was dedicated to Diana, goddess of the hunt, & the crescent moon was her symbol. Other reports indicate that it dates back to a battle in which the Romans defeated the Goths on the first day of a lunar month. In any event, the crescent moon was featured on the city's flag even before the birth of Christ. In 330 CE, Constantine rededicated the city to the Virgin Mary. Mary's symbol was the star & this was added to the previous crescent.
The early Muslim community did not really have a symbol. During the time of the Prophet Muhammad, Islamic armies & caravans flew simple solid-colored flags (generally black, green, or white) for identification purposes. In later generations, the Muslim leaders continued to use a simple black, white, or green flag with no markings, writing, or symbolism on it. It wasn't until the Ottoman Empire that the crescent moon & star became affiliated with the Muslim world. When the Turks under Mahomet II conquered Constantinople (Istanbul) in 1453, they found many star & crescent flags & adopted it as a symbol of good omen (In 339 BCE, Philip of Macedon [the father of Alexander the Great] was stopped from conquering Byzantium because his army was spotted due to a bright crescent moon). Legend also holds that the founder of the Ottoman Empire, Osman, had a dream in which the crescent moon stretched from one end of the earth to the other. Taking this as a good omen, he chose to keep the crescent & make it the symbol of his dynasty. There is speculation that the 5 points on the star represent the 5 pillars of Islam, but this is pure conjecture.

Religiously there is no significance of Moon or star with Religion Islam.
During Khilaphat e Usmania ( Caliphate Ottoman ), Muslims started using Crescent and star as their symbol. That is it.
Muslims firmly belief that God Almighty is The Sole Creator of Universes, and every living and nonliving things in/on universes. No compromise on Sole divinity of God Almighty ( ALLAH ).
Yes calender month starts with the sightation of Moon that is Crescent like for Christians it associated with Sun.

They are signs of God's creation of the universe.
Also, the Holy Prophet used to draw them, using his cane, on sand on many occasion.

Correction. "Allah" is the Arabic [and Farsi, too?] language name for God... the same god worshiped by Christians, Jews, Ba Hai's , etc.
God, by any name in any language, is still God.
