Spaghetti Carbonara is the most fattening yet totally satisfying pasta dish with bacon...
1 pound spaghetti
1 tablespoon olive oil
8 slices bacon, diced
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, minced
1/4 cup dry white wine (optional)
4 eggs
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
salt to taste
ground black pepper to taste
2 tablespoons grated Parmesan cheese
In a large pot of boiling salted water, cook spaghetti pasta until al dente. Drain well. Toss with 1 tablespoon of olive oil, and set aside.
Meanwhile in a large skillet, cook chopped bacon until slightly crisp; remove and drain onto paper towels. Reserve 2 tablespoons of bacon fat; add remaining 1 tablespoon olive oil, and heat in reused large skillet. Add chopped onion, and cook over medium heat until onion is translucent. Add minced garlic, and cook 1 minute more. Add wine if desired; cook one more minute.
Return cooked bacon to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together. Add beaten eggs and cook, tossing constantly with tongs or large fork until eggs are barely set. Quickly add 1/2 cup Parmesan cheese, and toss again. Add salt and pepper to taste (remember that bacon and Parmesan are very salty).
Serve immediately with chopped parsley sprinkled on top, and extra Parmesan cheese at table.

Cook the bacon, chop it up into bitesized chunks, make some pasta chill the pasta and bacon after they are cooked. Cut up the tomato and green peppers. Take mayo, salt, black pepper, oregano, red pepper and mix it together as a dressing to mix with the pasta.
If you have any of the following you can add to the pasta salad- olives , artichoke hearts, baby corn, carots, green onions, celery, cheese, cucumber, pickles.
its a easy and adaptable recipe to what you have available and its pretty filling. Cook up some vegies or a salad on the side whatever is available to you.

Do you have any cheese? Slice all of those vegetables as wide and as thin as you can, and layer them in a casserole dish, sprinkling them with seasoned salt and shredded cheese inbetween the layers. An onion would be great to throw in there too, but if not, add some onion powder or salt between the layers as well. Lay the bacon across the top and bake it until the vegetables are tender and the bacon is crisp. It is delicious!
For that matter, I don't see how you couldn't creatively layer cooked pasta in there as well, but you need to toss that pasta in something saucy or it will be pretty bland...

Dice up the tomato's and green peppers and squash, add some olive oil and balsamic vinegar and the bacon. Use that as your sauce for a pasta.
You could also bake the squash and serve it with Bacon Tomato sandwiches.

The first thing that comes to my mind is find a recipe for a pasta dish that calls for Italian bacon (pancetta) and substitute american bacon.
If you have enough tomatoes you could easily make a red sauce, about 5 med. tomatoes for one cup. Otherwise, just lightly fry the veggie ingredients you listed with some garlic and olive oil and mix the pasta in that.

I make a bacon pasta dish, but you'll need diced tomatoes, garlic and an onion.
Cook 1/2 pack of bacon (cut in small pieces) until desired crispness. Then saute one medium onion and as much garlic as you like in a couple tablespoons of olive oil along with cooked bacon. Meanwhile cook fettucine according to box directions. After onions are tender, add a can of diced tomatoes (I use diced tomatoes with oregano, basil), some oregano and red pepper flakes (if desired). Allow the tomatoes to warm. Serve over fettucine. Easy and yummy!

How about hearty bacon and tomato sandwiches and soup? Add cheese if you have it or avocado. You can also have a great chopped salad with the sandwiches and make a good dessert.

Try this one...it sure fills me up:
Bacon-Topped Cheese Soup
6 slices Bacon chopped
1/2 cup Celery finely chopped
1/2 cup Carrot finely chopped
1/2 cup Onion finely chopped
1/2 cup Green pepper finely chopped
1/3 cup All-purpose flour
1/2 teaspoon Salt
1/4 teaspoon Pepper
2 cups Half-and-half
1 cup Milk
1 can Clear chicken broth 14 oz
2 cups Cheddar cheese shredded
Place bacon in a 3 qt. casserole; cover and microwave at HIGH 6 to 9 minutes or until done. Remove bacon with a slotted spoon, reserving drippings in casserole; set bacon aside. Add vegetables to drippings; microwave at HIGH 6 to 8 minutes or until tender. Blend in flour, salt, and pepper; stir well. Gradually stir in half-and-half, milk, and chicken broth. Cover and microwave at HIGH 7 to 11 minutes or until thickened and bubbly, stirring at 2 minute intervals. Add cheese, stirring until melted. Cover and microwave at MEDIUM 2 minutes. Top each serving with bacon. Serves 9.

Bacon Pie
12 slices bacon
1 cup shredded Swiss cheese
1/3 cup chopped onion
2 cups milk
4 eggs
1 cup baking mix
1/8 teaspoon ground black pepper
Heat oven to 400ºF. Grease glass pie plate, 10x1-1/2 inches. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Sprinkle bacon, cheese, and onion in pie plate. In a medium bowl, stir milk, eggs, baking mix, and pepper with fork until blended. Pour into pie plate. Bake 35 to 40 minutes or until knife inserted in center comes out clean.
