How do I get the breadcrumbs to stick to the pepper? The outside is too slippery and it slides off.

Depends on your recipe, but make sure you have an egg wash that you are dipping the jalapenos in first. The breading should then stick to the egg mixture. If your recipe doesn't call for an egg wash, you could use a grater and rough up the skin a little bit, which would make the breading stick to the flesh of the pepper.

Dip it in an egg mixture. You can dip it in the egg mixture, then flour, then egg again, and then finally the breadcrumbs.

p.s. Wear gloves when handling fresh jalepenos. The oils will soak into your skin and it is very easy to scratch your eye or your face and hurt yourself. There isn't enough soap an dhot water in the world to get the pepper oils out of your skin, you'll have to wait for it to break down.

Forget removing your contact lenses if you touch a cut jalepeno!

You might try dipping them in an egg mixture before rolling them in your breadcrumbs. Double dipping will give you a crispier crust. Also, have you considered using fresh jalapenos instead of the pickled variety? Wearing gloves, cut them in half, seed and core them and stuff them with your favorite cheese. Replace the top and dip in egg mixture and bread crumbs. Good luck!
