Last year I cooked Chicken Parmesan, people seemed to like it. This year I want something new, something unique and yummy. Any suggestions? I'm really excited for this potluck. It need 3 dishes to bring in the party. I hope you can help(:

Prosciutto and melon is a classic and delicious Italian appetizer, not to mention super easy. A cold fruit-based soup is almost guaranteed not to be brought by anyone else, is refreshing this time of year, and doubles as a desert item. And if everyone loved your chicken parm, they would probably like a portobello parmesan as well. It's done the same way, and it's a little different. Go the extra mile and layer in some eggplant too.... mmmmmm!!!!!

You need 3 recipes? Here are three that I have taken before to potlucks that were big hits:

Potluck Spaghetti Salad

1 (16 oz.) pkg. spaghetti broken in half
3 medium tomatoes diced
1 cucumber seeded and diced
1 green pepper diced
1 red onion diced
1 bottle Italian salad dressing
1 tsp. poppy seeds
1/2 tsp. paprika
1/4 tsp. celery salt
1 tsp. sesame seeds
1/8 tsp garlic salt

Cook spaghetti according to directions; rinse in cold water and drain.

In a large bowl mix together spaghetti and vegetables.

In a small bowl mix together all the remaining ingredients.

Pour dressing over the spaghetti mixture.

Toss to coat.

Refrigerate overnight.

Toss before serving.


Potluck Pan Rolls

1 (.25 ounce) package active dry yeast
1/3 cup plus 1 teaspoon sugar, divided
1 1/2 cups warm water (110 degrees to 115 degrees), divided
1/2 cup butter or margarine, melted
2 eggs
1/4 cup instant nonfat dry milk powder
1 1/4 teaspoons salt
5 1/2 cups all-purpose flour

In a mixing bowl, dissolve yeast and 1 teaspoon sugar in 1/2 cup water. Add butter, eggs, milk powder, salt, 3 cups flour and remaining sugar and water. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.

Punch dough down. Divide into 27 pieces; shape into balls. Place 18 balls in a greased 13-in. x 9-in. x 2-in. baking pan and remaining balls in a greased 9-in. square baking pan. Cover and let rise until doubled, about 45 minutes.

Bake at 375 degrees for 17-20 minutes or until golden brown. Cool on wire racks.

Makes 27 rolls (27 servings).


I also make a simple chili....but, it can be made different by adding spaghetti or macaroni noodles and mozzarella cheese...it's really very good:

1 pound lean hamburger
1 diced onion
3 cans tomato soup
2 cans dark kidney beans with their liquid
1 t. garlic salt
1 cup water
1 6 oz. can tomato paste
2 t. parsley
1/2 t. pepper
1/2 t/ oregano
2 t. chili powder

Brown hamburger and onion until well browned. Add everything else.

Simmer uncovered for 1 hour, stirring occasionally.

I brought a corn casserole to my potluck and every one loved it. It is easy to make too. 1 can cream corn, 1 can corn with liquid, 1 c.sour cream, 1 box jiffy corn bread mix,3/4 stick butter mix all 4 things and put butter cut up on top and bake in a casserole dish at 350 for 1hr.
my favorite appetizer is take a soften cream cheese and mix it with imitation crab meat , spread it in a dish and cover it with cocktail sauce. Serve it with crackers. yum

try a broccoli and garlic: buy 3 heads of broccoli, and remove stems and keep the heads of the broccoli, put in a steamer basket or colander and set over a dutch oven filled with water, lemonjuice, and salt. steam for 10-15 mins till desired tenderness. take out and cool on a plate. before u go to potluck. heat 3 tablespoons of olive oil in a saute pan, and add 3 tsp of crushed garlic and 1 tsp of red hot pepper flakes to oil, and add cooled broccoli, stir around till coated and heated thru, and put in casserole dish. top with 2 tsps of grated parmesan cheese and heat in oven till cheese is melted. eat and enjoy...

A taco pasta bake? An orzo salad? No green bean casserole or potato salad or baked beans, everyone else will do it. A crudite platter with hummus? Chicken saltimbocca? Lasagna roll-ups? Chinese marinated and grilled pork loins? Stuffed cheesy garlic bread? Goulash?

ohh that is tricky...... : ( but i have some ideas!)
what about some cream cheese halepeno poppers. ( they sell them at the store! or a potato salad??? pigs in blankets are nice. or if your bringing dessert then brownies never get old!
