any traditional meatloaf recipe will work fine with the ground turkey. you may want to add some finely chopped mushrooms, since turkey needs the extra moisture and body those will provide. don't forget to add a little fat, since turkey is so lean - try a tablespoon or so of extra virgin olive oil. meatballs will work fine as well (again, add a little olive oil and chopped mushrooms for taste, moisture, texture) and come out fluffier than the traditional beef/pork mix. turkey burgers - add finely chopped mushrooms, onions, bell peppers and some Worcestershire sauce and you'll never miss the beef. lastly, tacos or pasta sauce work great substituting turkey for the ground beef that is normally used. you won't be able to tell that you used turkey at all.

Patty the ground turkey and add coarsely chopped onion. Cook the patties and then add a can of Golden Mushroom Soup. Add water if you want, we like it thick. Turn down to simmer with lid on. Use rice, potatoes or whatever as a side. My hubby likes collard greens on the side, I use spinach. Asparagus also tastes good. Have a nice cool fruit juice to drink and not only do you have a good meal, it's balanced.

I love turkey burgers. Just set out the bottle of Worcestershire sauce and let me at it!! I also make chili with ground turkey.

GROUND TURKEY AND VEGETABLES
1 lb. ground turkey
1 1/2 bags (16 oz. each) frozen vegetable mix (broccoli, carrots, cauliflower)
1/2 bell pepper, chopped coarsely
1 cooking spoon (not quite full) of olive oil or vegetable oil
2 chopped basil leaves or sprinkle of dry basil to taste
1 lg. onion, chopped coarsely
1 (8 oz.) can tomato sauce
1/4 c. water (you may want more)
1 bay leaf (lg. green)
A generous sprinkle of garlic powder and Italian seasoning or seasoning of your choice
Saute onion and turkey in oil and about half the water on low heat until the turkey starts to brown (just a few minutes). Then add rest of ingredients, mixing well to distribute tomato sauce evenly. Cover and simmer on low heat 12-15 minutes, stirring occasionally.
Tips: Sometimes I skip the saute and put all ingredients in the pan at once. This can be made minus the meat, as a vegetable course, or you can substitute shrimp or deboned chicken. Can be made ahead and frozen.
GROUND TURKEY GOULASH
12 oz. cooked ground turkey (1 lb. raw)
4 c. canned tomatoes, finely chopped
1/2 c. chopped green pepper
1 tbsp. instant minced onion
1 (4 oz.) can mushroom pieces with liquid (optional)
2 packets beef or chicken bouillon
3 oz. elbow macaroni, uncooked
Salt, pepper, onion powder and garlic powder to taste
Place cooked ground turkey (or 1 pound uncooked and browned) in a nonstick skillet with seasonings. Add tomatoes, green pepper, onion, mushrooms with liquid and bouillon; bring to a boil. Add macaroni (do not stir in) and continue to boil, uncovered, until macaroni absorbs all of the liquid and is tender, about 20 minutes.

Skillet Meatloaf
1 lb. ground turkey
1 small can tomato sauce
1 pkg. onion soup mix
1/2 cup green peppers and onion
garlic powder and black pepper
Mix everything together and form into patties. Brown in pan on both sides. Mix up a packet of brown gravy and pour over patties. Cover and simmer for 20 mintues. If you want you can add some mushrooms while it simmers.

Not a big fan of ground turkey or chicken, but I have made swedish meat balls and a chili con carne with the turkey, and it was quite good.

Mini Turkey cheeseburger salad:
1 1/2 pounds ground sirloin or ground turkey
1/4 cup finely chopped onion, eyeball it
1 tablespoon Worcestershire sauce
2 teaspoons steak seasoning blend or coarse salt and ground black pepper
Extra-virgin olive oil, for drizzling
3/4 pound brick sharp Cheddar (recommended: Cabot brand or Cracker Barrel brand* )
3 large hearts romaine lettuce
1 cup sliced pickles, drained – choose from sweet, half-sour or dill varieties
1 cup cherry or grape tomatoes
Dressing:
3 tablespoons yellow mustard (recommended: French's brand)
2 tablespoons apple cider vinegar
1/2 cup extra-virgin olive oil, eyeball it
2 tablespoons finely chopped chives
2 tablespoons drained salad pimentos or, 1/4 small red bell pepper, finely chopped
* There are many flavors of sharp Cheddar out in today's markets to choose from, so go plain or go wild! Among the choices out there in sharp cheddars: 5-peppercorn, smoked, dill, garlic and herb, roasted garlic, horseradish, chipotle, habanero, jalapeno – on and on!
Preheat a grill pan or a large nonstick skillet over medium high heat or, preheat outdoor grill.
Combine the meat with onion, Worcestershire and steak seasoning or salt and pepper. Form 2-inch meatballs, then flatten them into patties. Drizzle formed mini patties with extra-virgin olive oil to keep them from sticking to cooking surface.
Slice the brick of cheese into 1/4-inch pieces. Place patties into a preheated pan or grill pan or arrange on outdoor grill. Cook the mini burgers for 3 minutes on each side then add cheese to melt over patties. On outdoor grill, close the lid to melt cheese. In a skillet or on a grill pan, tent the mini cheeseburgers loosely with foil to melt cheese.
Coarsely chop romaine and combine with sliced pickles and halved cherry or grape tomatoes.
Whisk together the mustard and cider vinegar. Stream in the extra-virgin olive oil. Add the chopped chives and pimentos, stir to combine
Arrange mini cheeseburgers on salad and drizzle prepared yellow mustard over the completed dish.
