I found it at a restaurant in Alabama called " Lulu's " it was really great as a appetizer and you eat it with saltine crackers. If anyone has anything close to this, I would love to have it.

People adore this dish from Lulu's, a beach-party-themed restaurant along Mobile's Intracoastal Waterway run by Jimmy Buffett's sister, Lucy Buffett. Serve with crackers or tortilla chips.

3 (15-ounce) cans black-eyed peas, rinsed and drained

1/4 cup chopped red onion

3 tablespoons chopped green bell pepper

3 tablespoons chopped red bell pepper

3 tablespoons chopped yellow bell pepper

1/2 cup quartered cherry tomatoes

1/4 cup chopped parsley

1/4 cup balsamic vinegar

1/4 cup olive oil

2 tablespoons granulated sugar

Salt and pepper

Combine black-eyed peas, onion, peppers, tomatoes, parsley, vinegar, oil and sugar. Season with salt and pepper. Marinate for 12 to 24 hours before serving.

Per serving: 203 calories (percent of calories from fat, 33), 8 grams protein, 27 grams carbohydrates, 6 grams fiber, 8 grams fat (1 gram saturated), no cholesterol, 279 milligrams sodium.

1/2 green bell pepper, finely chopped
2 stalks celery, finely chopped
3 to 4 green onions with tops, chopped
Oil
1 teaspoon black pepper
2 teaspoons Tabasco
1/2 cup Ketchup
3 chicken bouillon cubes
1/4 teaspoon cinnamon
2 (15-ounce) cans of black-eyed peas
10 ounce can Rotel tomatoes with green chilies
1 clove garlic, pressed
2 jalapeno peppers finely chopped (fresh, seeded)
1 teaspoon sugar
PREPARATION:
In medium saucepan over medium-high heat, sauté bell peppers, celery and onions in a small amount of oil, until tender. Add black pepper, Tabasco, ketchup, bullion cubes, and cinnamon. Lower heat, add peas, tomatoes, garlic and sugar.

Simmer 30 minutes. Serve hot with corn chips for dipping.
Makes 1 quart of dip.


Texas Black-Eyed Pea Caviar Dip

3 cans drained black eye peas with chopped jalapeno peppers
1 purple onion, chopped
3 tomatoes, chopped
3 cloves garlic, chopped
2 avocados, chopped
2 jalapeno peppers, chopped
1 green bell pepper, chopped
1/2 bunch of cilantro, chopped
Zesty Italian Salad Dressing
PREPARATION:
After you chop all this up, add enough Zesty Italian dressing to get the consistency that you want for a dip. Add salt and pepper and refrigerate overnight. Serve with tortilla chips. Black-eyed pea caviar dip shared by Vicki

MISSISSIPPI CAVIAR

1 green pepper, finely chopped
1 red pepper, finely chopped
1 orange bell pepper, finely chopped
1 yellow pepper, finely chopped
2 bunches green onions, chopped
2 tomatoes, chopped in small pieces
2 avocados, peeled and finely chopped
2 cans black-eyed peas, rinsed and drained
1 bunch cilantro, chopped
1 (8 ounce) bottle Wishbone Italian salad dressing


Mix all together.
Let sit at least 2 hours before serving.
