Is there a particular name for the big switch that evil villan's usually use for turning big machines on? It's sort of like a big handle that you pull down to connect 2 metal sticky-out bits together to make a circuit. Any ideas?

Actually, I think the villians use a DOUBLE KNIFE SWITCH. It looks more evil than a single and has that big handle in the middle.

"Survey says" Knife Switch, they can be single, double, or triple (or more) poles a pole it a single circuit that it can make or break.
They can also be single or double throw. if they make a contact in one direction only that is single throw. If they make a contact in two directions (up and down) that is double throw.
Of course you still couldn't create a Frankenstein 's monster without a Jacob's Ladder that is the high voltage arc jumping between two stiff wires.
I had one made with a neon sign transformer. Not big enough to animate a human but we did bring a few mice and hamsters back to life!
Keep your tiny pitchforks handy they can be cranky little buggers!

Knife blade switch, yes.

To be very precise, if it has two sides and completes two separate circuits, it would be a DPST (double pole, single throw) switch. If hinged in the middle (can complete different circuits depending on if it is moved to the top or the bottom) it would be a DPDT (double pole, double throw).

They are called knife switches.
They used to be standard hardware for electrical switchboards.
When the origional Frankenstein was made they were state of the art.
They've been replaced by better hardware that doesn't draw an arc so easily, and doesn't expose live parts.

It is called an electrical disconnect box. It uses knife switches, one for each pole or phase, but also employs the use of springs. This helps the contacts release and engage faster to reduce the arcing at the point of contact.
