I like doing these things as a matter of recreation but when you have to do it at a set time, every week, whether you want to or not, its more like a job. Don't get in the habit of making excuses. . . I know because I am the same way. .
I did it with bowling and hockey as a kid, and now in my forties I find even being in a music group would be like a team sport that i have to do if i want to or not because others have planned around it.
It's hard to enjoy a "game" if you are not in the mood and you cant keep making excuses. If you really like it most of the time then you just have to "suck it up and take one for the team" once in a while. maybe they will even see that your heart isnt in it and excuse you on compassionate grounds.
But If you find it happens more than lets say 10% of the time then you should consider the good of the team. you can only get so good anyway, without loving the game.
If you really loved the game that much then no-one would have to drag you out. If you are a loner and you dont play for the rest of the team, then they don't really need you, so why not let someone who really wants to be there take your place.
Find something you can do well on your own. like tennis or squash where you can practice alone and you only need to find a partner when YOU want to play.

If you never want to go to volleyball practice again:
Tell your mom how you feel. It's better in the long run. Or you might need to do a bit of acting. Tell your mom that you have no friends on your team and when you go into the locker room you can hear people making fun of you. Work up some tears if you can.
If you just want an excuse for the day, you can always try to fake sick or an injury, but that's not one of my favorites. Something that works a lot of the time is that you really need to do homework or study because you're afraid you're going to fail a class. Then you can go to a friend's to "study".

Go outside in the garden for a while (make sure your mom cant see you or if she can fake an accident) then come back into the house (crying or limping) and tell your mom that you just twisted your ankle or something and that its really hurting -make her get ice out etc... make it look realistic or youll end up looking really stupid.
Then hope she doesnt expect you to go to practise. If she tries to make you, protest and say that your leg is still hurting and you wont be able to do anything during practise anyway.

It could be worse. Your parents could have denied you extracurricular activities because they didn't have the time, or want to take the time to go to practices, games, meetings, etc.
