If it is chicken breasts - take them out of the package and seperate them- submerge in cool water in the sink. You can microwave them, but be very careful about doing it so you do not get over run with bacteria or cook them.

If it is a whole chicken, submerge the whole thing, package and all in cool water. It will take a while, but there is less risk of bacteria spreading. Once is is a little defrosted, remove the packaging and the inside portion of the chicken.

The safest and quickest way to thaw a frozen chicken is to place it in a CLEAN sink with cold water and changing the water out a few times. Alton Brown of "GOOD EATS" from the foodtv network had a show about thawing and this had proved to be the fastes and safest. I have actually tried this and it really is fastest. (hot or warm water did not thaw any faster) Thawing in the microwave IS NOT recommended for chicken because of the uneven temps and the growth rate for bacteria actually speeds up

Microwave makes it rubbery. Fill the sink with warm water and submerge the chicken. Put a plate or heavy bowl on it to keep it under the water.

Microwave on defrost for as long as it takes and then let it stand for half an hour before cooking.

If you nuke it, the chicken always ends up partially cooked and warm. So, I place it in tepid water in my sink and change the water a couple of times. It defrosts quickly this way without changing its color or consistency.
