I don't eat them anymore but I used to dredge in seasoned flour and fry on the stove. Mashed potatoes and cream gravy, biscuits, corn on the cob, applesauce and green beans or collards is what we always had with them (maybe not all of those, but usually at least potatoes or biscuits and gravy and applesauce).

My two favorite recipes are as follows:

1) in a saucepan, bring a decent amount of lard up to a just melted state.

dip your room temp pork chops in the melted lard, and throw into a screaming hot pan. sear nicely on one side, flip and cook through.

2) cut up some white onions, cover with salt and squeeze the onions to get all the juice out of them. marinate your pork chops in the onions for a day, then cook the following day.

kind of plain, I know, but the flavors are ******' up there.

Lightly coat them in seasoned self-rising flour (salt, pepper and whatever else you like) Heat up peatnut oil or another frying oil in a pan and fry the chops until golden brown. I like the thin chop because they cook faster and are not dry like the thick chops.

pork chops are good chops when they're marinated with pineapple, salt and bit of sugar.

that's just it. sear it (pan) then try to grill it so there's the smokey taste to it.

it goes well with creamy soup for starter, fries and button mushroom for the sides.
mashed potatoes well covered with gravy. yummy.
top it off with cheese cake. my kids love the vanilla ice cream though instead of cheese cakes.
