I need to tranform some vhs tapes into dvds. However, it's an entire series and the episodes in the vhs tapes are not in order. Thus, I want, while recording some episodes, to leave the dvd disc open so that I can put them in order, without needing to use lots of dvd discs in order to transform episode by episode. Is this possible? Can the dvd disc remain open and continue recording from the point you've left the previous episode? By the way, as long as durability is concerned, which are the most persistent in time; dvds or vhs tapes?

You are thinking of DVDs as "tapes", which is wrong.
DVDs allow you random access.

DVD recordings allow for "Titles" and "Chapters".
You can record each episode, in whatever order, as a separate "Title". Then, when you see the table of contents for your DVD (pressing menu), you will see a list of the recorded episodes. You can even edit the Title names before you finalize the DVD.

So, record an episode, press stop. This automatically creates a new Title, Record another episode, press stop., etc.
Edit your Title names.

Finalize your DVD.
