getting someone to fall down from a kick isn't really an intentional thing, its more of a really good bonus. it would require almost inhuman timing and accuracy to do it whenever you wanted to. it happens when the person has most of their weight on that leg and you kick them in the back of the knee so that you contract their tendons and force that leg to collapse. you can try and see how it works by tapping someone in the back of the knee while they're just standing, or haave someone try it on you, if your weight is balance between your two legs you might stumble but you shouldn't fall. like i said falling happens when all their weights on that leg. if you're trying to do it it only works about once every 10 times, sometimes it just happens when your aiming for the thigh and miss.
the other thing you might be thinking of which is much more consistant is called a sweep. a sweep does look like a kick but its actually more of a block/trip. what you do is move them/push them so that they have to step to keep their balance, but then you stick your foot in the way so that they cant take a step, you block their step. its hard to describe you'd have to get someone like a wrestler or judoka to show you. its actually harder to do if you think of it like a kick, though it really does look like one.

There are three places that if kicked with a hard roundhouse can drop a normal person in one shot. One is the outside of the leg, ideally about 2 inches above the knee. Mui Thai folks claim kicking with a downward angle causes more pain. Another is the hamstring. Thai fighters will tell you to hit this with an upward angle. The third is the inside of the leg, 3-4 inches above the knee. A martial artist or well conditioned athlete should be able to withstand any of these kicks once, but the average joe on the street will go down if any of these kicks are done properly.
Also, I've taken a hard side kick to the front middle of my quad in sparring that didn't drop me but basically immobilized me for the rest of the class. And supposedly a hard side kick or front kick directly to the knee can cripple someone, although it's hard to be sure since it is too dangerous to practice.

It's seriously force that causes that. Being kicked in the leg by someone like Mirko Filipovic for example would be (seriously) like being hit in the leg with a baseball bat. And a very quick hit too, hard to defend. I've seen him actually win fights before by kicking people in the legs, and broken many ribs with rib kicks. These guys can truly kick harder than one would think....

When I perform or teach this kick, I hit with my shin. To ensure maximum damage I put as much weight behind the kick as possible. If you only put the weight of the leg behind the kick, someone who has conditioned the leg can take several hard shots. Finally on the point of impact, you should push down scraping your shin down the leg, which causes further damage. Then push your leg back and return to your fighting stance.

Hard roundhouse kick to the outside of the thigh. There is a nerve running there that gets really irritated when hit hard. Repeatedly taking shots will just wear the leg down also.

there is so many different types of kicks to the legs to make them fall down one is right behind the leg , the joint is a pressure point they will falforward, a sidekick to the knee caps will break it and obviously cause them to fall , a roundhouse kik to lower thigh in the back will act like a sweep and the sidekick to inner thigh from front will swing leg out ward and they will fall hope that helps

Most who are knocked off their feet by a leg kick are already off balance at the moment they are kicked.
A slippery canvas can have a lot to do with it too.

kick em in the kneecaps thats more of a self defense more cuz it could mess some1 up for life(kneecap strikes are banned in competition), the thigh is pretty sensitive in muay thai we kick to the inside and outside of the thigh which can cause a lot of pain. the sciatic nerve(outside thigh) is the single largest nerve in the body and the femoral nerve(inside thigh) is painful to get hit in too
