Tropical Plantation Ice Tea
1 Pitcher of your favorite Ice Tea
½ Quart Pineapple Juice
1 Pineapple sliced lengthways
Stir the Pineapple Juice into the Iced Tea and garnish with the Pineapple “spears”. You may remove the skin of the Pineapple or leave for that “rustic look”.
Pineapple Luau Style
Cut a thick slice from the top and bottom of an unpeeled pineapple. Remove center of pineapple in a single cylinder, leaving 1/2-inch of the fruit inside the rind. Cut peeled fruit in quarters lengthwise, remove core and cut into eight spears. Replace bottom piece; refill shell with spears and replace top. Serve by removing crown and pulling out the pineapple spears. Makes 8 servings.
Corn Chowder
INGREDIENTS:
1 qt chicken stock
4 potatoes, peeled and diced
2 onions, diced
1 cup diced celery
1-1/2 cups light cream
salt and pepper to taste
1/2 cup chopped parsley
1 tbsp fresh dill (or 1-1/2 tbsp dill weed)
2 cups chopped Portuguese sausage (or spicy Italian sausage if not available)
2 cans (17 oz ea) creamed corn
PREPARATION:
In large stock pot combine chicken stock, potatoes, onion and celery.
Simmer until potatoes are just tender.
Add remaining ingredients and simmer until heated through.

Here are some to pick from, have fun
CHICKEN LUAU
1 (18 oz.) barbecue sauce
2 tbsp. honey
2 to 3 lb. chicken pieces
1 (8 1/4 oz.) can crushed pineapple, drained
In a bowl combine barbecue sauce, pineapple and honey; mix well. Using a 2 foot piece of heavy duty foil, place chicken pieces in center and thoroughly coat with 1/3 of the sauce. Seal by folding all edges securely. Place on grill, 6 inches from source of heat, cook 40 minutes. Remove chicken from heat, take out of foil and place back on grill. Cook 10 to 15 minutes longer, turning often and basting with remaining sauce.
HAWAIIAN LUAU
1 3/4 c. crushed vanilla wafer crumbs
1 stick melted butter
3 bananas, sliced
1 can Eagle Brand condensed sweet milk
1/4 c. lemon juice
1 sm. can crushed pineapple, drained
1 sm. carton Cool Whip
1 sm. can coconut
1/2 c. chopped nuts
1 sm. jar cherries
Use Pyrex dish. Mix vanilla wafer crumbs with butter and line dish. Place sliced bananas on top of that. Mix lemon juice and milk together until thick. Spread over bananas. Next, put crushed pineapple on, then the Cool Whip, then the coconut, nuts and cherries. Chill and serve.
LUAU BAKED BEANS
4 c. canned pork and beans
1 1/4 c. crushed pineapple
3/4 c. chili sauce
1/4 c. molasses
1/2 c. onions, chopped
1/4 lb. bacon, diced
2 tbsp. prepared mustard
Fry bacon and remove from pan. Lightly fry onions. Mix all ingredients in baking dish and crumble bacon on top. Cover and bake for 45 minutes in 350 degree oven. Uncover for last 30 minutes of baking.

SMOKE A HAM as a meat.

take raw bacon slices cut them in half, wrap a half slice around a pineapple chunk and put a toothpick in to hold the bacon. put them on a cookie sheet and bake at 350 till the bacon is done. They are great.

Chicken livers wrapped in bacon, marinate livers in teriyaki sauce, wrap in bacon and pin together with a toothpick. You can cook them in a pan or broil them. Yummy

buy a pineapple and some kebab sticks..put some big cubes of pineapple on the kebab sticks and put them in the refridgerator so when you bring them to the party they are cold...Hmmmmmmmmmm SOOOOOO YUMMY (and healthy!)
