If you already have the grill fired up, cut your zucchini lengthwise into 1/4" thick planks and grill it with a little oil or bbq sauce turning once. Go to the Bisquick site for their Impossibly Easy Zucchini Pie. Sometimes I use cheddar cheese and other times, parmesan. Sometimes I have this as the main entree; other times I have kielbasa or similar with it. And it reheats great in the microwave. I make it in my quiche dish while a friend doubles the recipe and bakes it in a 9 x 13 pan. You can add raw zucchini in salads instead of cucumber as well.

I like to slice it, put it in a dish with just a little water and some sweet butter. Then microwave it for about 2 or 3 minutes. Covered or partially covered. Gives a real zucchini taste. And is quick and easy too.

I really like zucchini cooked in a skillet. Here is how I like to make mine. Place about 2 Tbs of vegetable in the skillet and then cut your zucchini into small quarter pieces. I then add red pepper, garlic salt, italian seasoning, and cumin to taste. Make sure that you don't add too much of any seasoning because it is easier to add more to it if it is still bland in flavor.

I grate one zucchini on the large hole side of a grater. It grates easilly. Next, chop one sweet onion.
In a saute pan, add 2 cloves of garlic to about a 2-3 tablespoons of olive oil. Heat until oil is just hot, add onions and saute for about a minute or until they "sweat" by keeping the heat low to medium. Do not brown the onions. Add grated zucchini and toss into the sweated onions for just about a minute. Salt and pepper to taste. Do not overcook.
This is a great side dish. Quick, easy, and plenty of taste. Bon Appetit.

Zucchini bread
1 cup oil
2 cups zuccine(pelled,grated an drained)
1 cup crushed pineapple(drained)
3 eggs beaten
2 tsp. vanilla
2 cups sugar
3 cups flour
1 tsp.salt
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup chopped nuts
Directions
Mix all Ingredients together.
Bake in loaf pan for 45 min. at
350 degrees !

Marinate it in your favorite salad dressing, like Italian or Greek, for a few hours. Olive oil with salt and pepper works really good too! And then, put them on the grill. Very tasty.
If you don't have a grill handy, put them in the frying pan with butter/margarine and your favorite seasonings and sautee them!

OH MY GOD MAKE IT INTO A BREAD
3 eggs slightly beatened
1 cup veggitable oil
2 cups granulated sugar
2 cups zucchini grated
3 tsp. vanilla
3 cups flour
1 tsp salt
3 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
In order mix these ingredients in a bowl. Eggs, Oil, sugar, Zucchini, vanilla, then add the flour, salt, cinnamon, baking powder, and baking soda. Divide into 2 loaf pans. Bake at 350degrees F for 1hour. If you desire add nuts or raisins
