Being a southern girl, the more powder to the rub, the longer it needs to cook - such as on the smoker. If I need to cook something in the next hour or so & it needs a marinade, I use a liquid so it will have a little time to soak into the meat......Whatever type cut of meat you are using is going to make a diffence also.......

Rub works best on the grill, which takes off the edge, but if you want do to stir fry or something similar, melt some butter in a pan, then as it gets melted, mix in the rub, then when it's properly hot (but not overly hot - you don't want to burn the butter - add the meat. Once the meat is added and covered, you can turn the heat up a bit, because the butter isn't so exposed.

If you're going to cook it a different way you can still use that technique to prep the rub, then dip the chicken or strips or whatever in it and cook them however you wanted.

On a grill, however, you can just coat the meat directly - it won't be as intense as it burns off - and grill. But for baking or sauteeing, use the above method.

If you're gonna make fajitas, cut the meat into strips, then sprinkle your spice rub ovr the meat and mix it up. Set aside. Cut peppers and onions into strips. Heat up some vegetable oil in a pan on medium hi. Add meat to pan and cook until just cooked through and a little pink in the middle. Test one by cutting a little chunk off one of the strips. When meat is done, take out, add a little more oil and add veggies. Cook until translucent and a little browned on the edges. Warm up tortillas and serve with sour cream, salsa and refried beans. Happy cooking!
