I was planning on making my husband a nice romantic meal this Saturday. I planned on making Beef Wellington for the main dish and Creme Brulee for desert. I can't think of anything to make for a side dish. I thought maybe green beans would be nice, but kinda plain... Any ideas?

the first thing that came to my mind was green beans, before i was even done reading the question. and then i thought yes, they are kind of plain, but they would go good with the meal, therefor buy fresh green beans, and steam them mix a little soy sauce and sliced almonds in with the beans and serve.

WOW! You're ambitous... They say Wellington is a very fussy recipe... Anyway, I remember seeing an episode of 30 Minute Meals with Rachael Ray. She made Steamed Broccoli Spears to go with her Wellington alongside Garlic & Herb Broiled Tomatoes.

Here's the tomato recipe:
4 plum tomatoes
1 cup plain bread crumbs
1/3 cup grated Parmigiano-Reggiano
1 teaspoon chopped fresh thyme leaves
1 clove garlic, finely minced
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Preheat broiler to medium high.
Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. In a bowl combine the bread crumbs, Parmigiano, thyme, garlic and olive oil. Season mixture with pepper
and sprinkle over the tomatoes. Place tomatoes under the broiler for 5 minutes or until golden brown.

I think with that I'd do a steamed asparagus or broccoli with a hollandaise sauce. Maybe some rice pilaf, and a green salad with balsamic dipping sauce.

But it isn't what you have, it's how you have it. Make the table, use your best dishes, light some candles. I could eat burritos or Chinese by candlelight on the china and find it romantic since it was the thought and effort.

usually I make something a little bit lighter for myself (like green beans as well) when i cook beef wellington. But when I'm cooking for me and my boyfriend, I usually make a rice pilaf with it.

Here's a Recipe

Rice Pilaff

2 tbsp vegetable oil
1 medium onion, diced
1 cup Diced Mushrooms
1 tsp garlic, crushed
2 cups long grain rice
50 gm butter
3 cup beef stock
salt, pepper

A veggie side..hmm..Try a nice garlic mashed potatoes and spinach..just mash spinach into potatoes with sauteed mushrooms..I had it once in a 5 star place and duplicate it eversince..

You cana lso do an appetizer side of Bruschetta..take french loaf slices..dice fresh tomatoes (great season for them right now) with pesto sauce which is basil, garlic, olive oil and oregano..you can add a touch of lime..mix tomatoes in well...bake the french slices with the pesto mix on top, topped off with mozerella cheese..takes less tahn 10 mn. to make.

I'm sorry but your dinner isn't 'romantic' it's FORMAL. A 'romantic' dinner would be 'finger food' with dip that you could eat 'lying on a blanket' (either in the park or on your bed) and with his 'head' in your lap or vice versa ... and have some meat, veg, and carbs (crackers) and several 'dips' ... with some 'good drinks' that are NOT 'alcoholic' because after you EAT you are going to want to 'play' ... either in the park (ball, running, etc.) or 'at home' ... you get the picture, don't you?

You want to go with a green vegetable for sure. Try asparagus or brussel sprouts.

I would say either a nice mixed greens salad or -- if you want something hot -- steamed or creamed spinach.
