I don't have time to cook something every night, but I want us to avoid fast foods and eat healthy. I am thinking about what meals I could cook up all at once and freeze them and have them last a couple of weeks at least.

I have a cook book called fix , freeze . take and bake it has every food course you can think of even dessert . That you can make 1 extra mabye on a weekend and make as many as you want and just take out heat up and you have a healthy meal . You can buy it from www.gooseberrypatch.com

I know how busy people can get . But now a day's with all the convience of modern tools it's not a lot of time to prepare a great healthy meal.

I do not have children. I have a two person household . What I do is prepare meals before head. With tools like zip log bags and plastic containers, they easily store in refiragrators.

Meals I freeze are most likly

home made zuchini caseroles
home made squash soup frozen in a bag
home made corn chowder frozen in a bag
or home made macaroni cheeze.

When purchasing cucumber or carrotts , I wash them after I come home from the grocery's. I clean them, I cut them into different shapes (julien, chuncks , slices)
Than I put them into zip log bags, small onces. Than you have them easily ready for making salads.

Another thing, slow cookers are wonderful. Do it the night before, turn it on in the morning. Lit it sit and do it it's thing. When you come home in the evening you got a meal.

I don't have a lot of time to cook during the week either. On the weekends, I'll make lasagna, chili, soups, casseroles and freeze in single portions. I also buy big family packs of burger and make individual patties and freeze them separately. Most pastas you can freeze in smaller portions also.

in a large skillet or pot brown the to hamburger (1lb or more) to medium done then and add 1/2 large yellow onion chopped and 1 med. green bell pepper chopped 2 minced cloves of garlic while meat is still cooking .then when meat is brown and vegges are tender add some salt and pepper and onion powder and garlic powder and about 3 table spoons red chili powder and about a table spoon of crushed red pepper flakes mix all together then add 1 large (16oz?) can of diced red tomatoes and add water to the can to fill it 1/2 way swish it around to pick up any tomato juice still left then add more water to fill the can, then pour it into the skillet with the meat.then quarter and THINLY slice 2 medium raw regular old potatoes and add them to the mix. Salt and pepper mixture to taste then bring to a low to medium boil cover and simmer till potatoes are tender stirring occasionally. you can add corn or squash if you want also. we usually serve this dish with Spanish rice and re-fried beans. it's great to scoop up the food with corn or flour tortillas too.Hey it's cheap and tasty and not that much work. we call it Piccadillo... well it's our family version anyways. and it freezes great and you can make alot and seperate it out into a few meals. Make a big pot of spaghetti sauce and freeze bags of it for a quick dinner. just thaw and reheat and add to cooked pasta. My mom makes a big pot of chicken noodle soup or beef stew and freezes that too. make a big old pot of homemade chili beans you can freeze portions and you can have chili dogs or chilibeans and baked potaoes or eat a bowl of it with some garlic bread.

You can freeze just about anything.

Meats are especially good, you can cook them all in big batches and freeze in the needed portions.

Pasta you can make on the spot, and frozen veggies also save time.
