A friend gave me some talapia (sp?) fillets, are they good for battering and deep frying and could someone reccomend a batter recipe please?

Use all purpose flour
add spices you like (common would be salt, pepper, garlic, and if you like a little heat cayenne) but whatever your preference is is fine.
Mix flour and spices well.
Make a egg wash with 2 large eggs and a up of milk.
Dip fish in flour, then egg wash then back in flour then fry in oil . Talapia is also great blackened.. if you have the cast iron skillet, would recommend you give that a try... Good luck..

This is my (somewhat) recipe.

For the dredging, 3 cups of flour, some salt, pepper, chili powder, cumin, and garlic powder and onion powder. Whisk all that together.

For the batter, use 2 cups of flour (seasoning the same way as above) and whisk in a room temp beer. If it looks too thick, add a little water.

Dredge those fillets in the seasoned flour, then dunk in the batter, then drop in the fryer or hot oil.

I've always gotten raves by doing it this way.

I use a premade seasoning coating that it wonderful.. It is a seasoned cornmeal coating and is called louisannas fish fry I am sure if you do not want to make your own that your local store has it or something close...I first moistrn the fish with a mixture made out of a beaten egg and a little milk, then i put the seaoning in a large baggie and shake the fish pieces in it...this keeps your hands from getting to messy. Make sure that your oil is hot when you add the fish or it may become soggy or you may lose the breading off. Also i use peanut oil as it has a nice taste and can tolerate the heat the best with no smoking..good luck

Tilapia fillets are very thin, might be ok, but are better just pan fried in a little olive oil and butter. The batter I make is simple,just use around 2 cups flour,whatever spices you like,I use garlic powder,cayenne powder (if you like it hot), salt,pepper and then add around a cup or so of beer. Mix together and then dip fish and fry. Hmmm good. If you don't have beer, water will work just fine.

3-4 cups self rising flour
salt................ 3-4 tbls spoons
pepper .........1-2 tbl spoons
cayanne........2-3 tsp

egg wash.( egg and buttermilk)..dip egg wash dip and additional salt once its cooking.
