How can I store or preserve little yellow squash? I just pickeled in cucumbers. But with squash and zuchinis" I am not sure. Nevertheless, any one having easy receipes? thanks.

Thanks Kitkat. But that's not what I am after. I am after how to perserve it store it for winter. So that we always have fresh veggies avaiable.

You can freeze squash but when you cook it,keep it frozen until you are ready to use it. Don't let it thaw. I freeze zucchini by first shredding it and then when I am ready to use it in breads and cakes,I thaw and then squeeze the liquid out. It does real well.

I just do not like the way yellow squash freezes...the water content in it is too high, and it just never comes out the same. With zucchini, I think the same thing - this is why you don't see a lot of it in your grocers freezer section. Make some zucchini bread or muffins with the zucchini - those freeze quite nicely, and what you can't use of your yellow squash, share with family and friends! They will love you for it!

You may be able to slice and freeze it. Recipe: I like to buy squash and steam it with some sliced onion (can omit) - salt and pepper it good- once steamed put it into a small casserole dish and sprinkle well with Parmesan cheese and put in the oven (at around 350 or so) and bake until the cheese is melted- this is super yummy! (or you can sprinkle the cheese over the veggies right in the pot- put the lid on and the heat from the water will melt it).
