My wife and I have had a small garden for three years and this year it grew very well. But the problem is we planted green peppers and neither she or I have any recepies to use them with. If anyone has any ideas or thoughts we would greatfull

You can also freeze or dry then for use in recipes throughout the year.

Slice them into strips and add them to a stirfry. Deeelicious, and colorful. Or else get the insides cleaned out and stuff them with a meatloaf mixture blended with a little cooked rice. keep the bit you cut off the top for a lid that you can put back on during cooking. Go to your favorite search engine and type in cooked green peppers or something like that, and my bet is you will pull up a ton of interesting preparation and cooking ideas.

STUFFED GREEN PEPPERS! MMMM ENJOY
INGREDIENTS
6 medium tomatoes - peeled, seeded and chopped
1 medium onion, chopped
3 ribs celery, diced
1 (8 ounce) can tomato sauce
1 cup water
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
4 medium green peppers
1 pound lean ground beef
1 cup instant rice, cooked
1 teaspoon dried basil
DIRECTIONS
In a large saucepan or Dutch oven, combine tomatoes, onion, celery, tomato sauce, water, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to a boil. Reduce heat and simmer 10-15 minutes. Meanwhile, cut tops off of green peppers and remove seeds; set aside. In a bowl, combine ground beef, rice, basil and remaining salt and pepper; mix well. Fill peppers with beef mixture. Carefully place peppers in tomato sauce. Spoon some sauce over tops of peppers. Cover and simmer for 40-45 minutes or until beef is cooked and peppers are tender

Hi!
There is always the old stand-by stuffed green peppers.
You can also cook them with onions and italian sausages and serve in a hoggie roll.
Also, green peppers are a staple for any southern dishes like gumbo.
Sliced and covered with monteray jack cheese and microwaved till tender makes an easy appetizer.
They're really good in salads too.

I usually chop up green peppers and put them in meatloaf or I brown ground beef and onions together then mix them in rice and stuff them in pepper then top with cheese and back them in the oven at 350 for 30 minutes.

Wow, its endless.
A few ideas.

Boil them whole with the top cut off until almost soft and stuff them with chop meat and rice then bake for 15 min.
Fry them with Italian sausage.
Use them raw in a salad.
Make a chili.

You can stuff them, saute them with onions, chop them and place in spaghetti sauce, meatloaf. Make an omelet with them. I use green peppers in almost every meal. The sky is the limit!!!!

a really great meal is frying up sliced peppers and adding some meat like chicken or beef and some other vegtables like chopped onions. it tastes wicked good and its low cal and low fat too!!!!!!

Chop and use in bolognaise or chilli. Roast in olive oil with other veggies and eat with chops. Chopped cold in salads. Nice in rice salads.

you can add them to salad ....fry them with chicken for fajitas....you can stuff them with meatloaf .....for stuffed peppers ....or add onion rice and crackers to hamburger ......and top with bbq sauce and bake ,.....they are goo to eat with cheese instead of crackers.........you can cook them with zucccini and tomatoes and onions with some italion seasoning......and top with parm cheese.
