Hi ~

What would you call a lady who works in an auberge as a lady on the staff in a position like an innkeeper ....not
"la proprietaire" which would mean "the owner", would it not? ....but a lady who looks after the guests and
all that goes on in the auberge ....

p.s. Does "la proprietaire" mean a man who is the owner, or can it also mean a woman who is the owner? What would be the correct word for her, in case there is a different word?

"La proprietaire" is for a woman
"Le proprietaire" is for a man

And for the auberge vocab, it's "La Hôtesse" for a woman, " Le Hôte" for a man.

"La propriétaire" is for a woman. She is the owner of the place concerned.
"Le propriétaire" is for a man and he is the owner of the place.

As towards "auberge", I would say "hôtesse" because the etymology corresponds perfectly to that meaning. You can check on... See below

L'aubergiste is the nearest thing to inn-keeper that you'll find. Not necessarily the owner.

LE propriétaire is the (man) owner, landlord; LA propriétaire is the (woman) owner, proprietress, landlady.

isn't that a concierge? or no...

well la proprietaire is feminine, isn't it? since "la" is feminine. i don't think there's a different word. it's just a "la" and "le" (masculine) before the word.
