...no, no, REALLY, do they taste any different, or does the colour make them taste different?

They are all the same species of pepper, just at different stages of ripeness. Therefore the green ones are kinda like a green tomato... rather firm and tangy. The yellow ones are a bit riper, therefore slightly softer and a mixture of tang and sweet. As the pepper ripens, it gets more sugar in it, so the red ones are the sweetest (and also softest). You may also notice that the shelf life decreases from green to red.

Yes some what. Red and yellow peppers are ripe peppers. Green ones are not ripe that why they are picked green. Some people can't digest the green ones but the other colors are OK for them. If thats the case just peel the green peppers because it's the skin that causes the problems.

There is generally no discernable difference in taste between the red and green (and yellow and orange and purple for that matter). The difference is as much related to growing conditions as to variety. Personally, I use the various colored peppers to improve presentation.

Yes red sweeter I also like the yellow and orange peppers too.

I like the red they are sweeter than green yellow is good but orange they are the best very sweet Green ones not sweet

To add to other's comments,the price differs also. The longer the pepper is on the vine ,the costlier it gets. Green,then yellow,then red...

red are sweeter because they were picked ripe whereas the green ones were picked early. definitely taste different.
