This isn't exactly a one pot recipe but it can be cooked over an open fire. You'll need aluminum foil, ground meat, carrots, potatoes, butter or margarine, salt & pepper and onion is optional. Make the ground meat into patties. Tear off aluminum foil into rectangles about 5 or 6 inches wide. Place a meat patty on each square of aluminum foil. Then slice carrots & potatoes and put on top of the meat. If you are using onions, do the same with the onion. Salt & pepper each one and then add a pat of butter. Pull up all sides of aluminum foil to seal packages. Cook over open fire for about a half an hour. Check for doneness. Some people call these hoboes and some people call them silver turtles.

A couple I can think of.....
Put some rice in your pot and then add a can of tomato soup plus the same measurement twice again in water or milk, depending on how creamy you want it. Then add some sausages chopped into smallish slices and any veg you fancy.
Another would be chopped chicken with a some chicken stock. Then add some tin tomatoes, sweetcorn, onion, brown sugar and brown sauce (The latter two can be picked up in sachet form in most cafes and restaurants!!) Add each according to taste for some simple BBQ flavoured chicken.

Try Irish Stew
I have provided a good link that includes adding Guinness - which will provide a huge amount of iron and keep you going.
Another is to try
In foil - fry off some bacon lardons/bacon/pancetta/onions/garlic/peppers - whatever you want. Keep warm -rest near fire.
Cook any pasta you like- mix a small jar or Pesto, some Parmesan - simple tasty and made within about 15mins.

I would go for a nice shoulder of beef which can be cooked very slowly (1 hour per pound) in about 500 ml of water with one or two stock cubes.
Cook very slowly as this joint is very veiny which means it takes longer to tenderise.
Once the meat is cooked (it should fall off of the fork) or brak up easily
Just add some curry sauce or any other sauce along with chopped potatoes, carrots and maybe some tinned peas and corn.
It makes a wonderful casserole you can enjoy indoors or out

Field stew i think it is called and is very flexible with what you can put in it.
you need
mince meat for the main ingredient, then you can add what ever you like such as:
chooped onions, potato, carrots, tomato, pepper, salt. anything you want really.
just stick it in the pot and stir every now and again like a stew.
you may want to add some cooking oil to greese the bottom of the pan, if you feeling a little wild you may also want to add some red or white wine.

This is for breakfast and only requires one pot:
1 Package Potato Rolls
Eggs
5 Apples
Cinnamon
Vanilla Extract
Honey
Syrup
Butter
Cut up apples, any size you prefer. Put in pot with butter let cook over low heat about 5 minutes. Tear each roll into fourths and then dunk/wash them in an egg bath (put 4 eggs in a bowl, stir and then dip rolls into it). Add to apples. Then add cinnamon, vanilla and syrup as the mixture cooks. Add to taste. I like allot of vanilla flavor. Keep stirring, cook about 15 minutes. It turns into something like a bread pudding. My crew LOVES this!!!! This makes enough for 4 people. If you have leftovers throw it into ziploc bags and put in the ice chest and eat it cold as a snack later. YUMMY!!!!

2 Cups of diced, cooked Ham or 1 can of SPAM, diced
1/2 Onion, chopped
1 Package of Lipton Spanish Rice Mix
1 Can Diced Tomato-save liquid
1 Can Tomato Sauce
1 Bell Pepper - diced (optional)
Salt/Pepper/Onion Powder to taste
Directions:
Sauté onions, bell peppers and Ham (or SPAM) in skillet. Add Spanish Rice Mix. Use the liquid from the canned tomatoes instead of water. Add tomato sauce and seasonings to mixture. Cook till liquid is absorbed and rice is done. Makes 4 hefty servings.
Comments:
We've used SPAM quite often instead of Ham, simply because it carries more easily - it does not require refrigeration. This is a one dish meal if you add a can of peas towards the end of the cooking time. All is cooked in one pot with little cleanup. The kids love this on our campouts and if I forget to cook it by the 3rd night out - they start complaining and begging me to cook it THAT NIGHT!
Campers Pot Roast
4-6 Country Pork or Beef Ribs (best) or 2 lb. Beef Roast (any kind works well)
4 Medium Onions, peeled and sliced into thirds sideways (rings)
6-7 Medium Potatoes (at least 1 per person) peeled & cut in half
1 Large Bag of Baby Carrots (about 1-2 lb)
1/2 Cup Celery Chunks
Salt and Pepper
Bar-B-Que Sauce (optional)
Directions:
Place ribs, potatoes, onions, carrots and celery in large pot or roaster. Cover all with water. Salt (about 1 1/2 teaspoons) and pepper (cover top of water medium to lightly). Place pot on fire and let cook slowly for a couple of hours while you fish, swim or enjoy the outdoors. Dinner is done when you return. To spice it up, remove the meat from the vegetables and place in pan with bar-b-que sauce (meat will be falling off the bones), stir in sauce over fire for about 5-10 minutes and serve.
Comments:
Use roasting pan or large pot (with lid or cover with foil). Can be cooked on campfire, grill or camp stove. Feeds 6-8
I have picky eaters, but they never fail to clean their plates when I fix this

Mushroom/Turkey Stroganoff - Fry onion and garlic in a large billy can. Add mushrooms ( and or turkey if you aren't veggie) plus a can of Campbells condensed mushroom soup. Add two cans of water (use the empty soup can) and cook down for about 20 mins. Add a pouch of the ready cooked rice at the last minute.

Make hamburger pattys, wrap it in tin foil with baby carrots, potato slices, onion slices, spices (whatever you like). Double wrap and seal. Place in hot coals for about an hour depending on how hot your coals are. The juices from the hamburger cook everything else. MMMMMM! Easy to transport in cooler and easy to cook because you can do other things while it is cooking.

this is a dinner recipe, sausage and potato hot pot, add sausage,potato onion and carrots and a bit of parsnip or any other vege to your pot with water and a good stock cube, bring to the boil let it simmer for 30 mins, add a bit of instant gravy mix to thicken, then add a can of baked beans(optional) and you have a lovely warm wholesome healthy meal, xx
