You can buy veal in a supermarket, sometimes already packaged, but definitely ask your butcher, because im sure he could fillet it into nice pieces.

**Btw, if youdo find it packaged, i reccommend Nature's Promise, is the best quality, and the safest meat.

Dip each fillet, into whipped eggs and coat the veal with breadcrumbs, two bread crumbs reccommended are Panko (which is a Japanese breadcrumb, and it isn't dried, it's just bread that has been immediately crumbled after baked, so it's a little lighter, for fluffier coating) But, also you can use Italian style bread crumbs, they are very dry, so you can keep them in your pantry longer, and they are seasoned with dried herbs, and have more flavor.

Place the fillets in a very large skillet, that has a little bit of depth of oil. Then, basically fry the veal, and flip after a few minutes, till it got a nice golden crust. Then, place into the oven, heated to over 300 degrees, so i can finish cooking.

This is a salad to serve on the side:

A frissee salad.

You can find frissee lettuce, by the romaine, and packaged lettuces.
Then, toss it with fresh figs.

Dressing: dried shallots, sherry vinegar, dijon mustard, salt, pepper, extra virgin olive oil, minced garlic. Whisk together.

Toss the dressing with the frissee.

serve with brie cheese.

Veal is usually only available from a licenced game dealer (butcher) as is such things as rabbit, hare, grouse, quail etc. etc. I would imagine that you would be able to find one in yellow pages.
I live in N.E. England and I know of two within 8miles of where I live.
Sorry I can't help you with any recipes.

*edit*
Don't know why, but I seem to have got more than a little mixed up here. I was thinking of Venison.
Veal of course comes from a calf, and therefore should be available at most butchers and supermarkets

Italian butchers have the best selections.

I just love using ground white veal for my meatloaf. Make it like usual, except add some diced white old cheddar cheese and diced red onions to the meat, and add rosemary and thyme to your usual seasoning mix.

Veal scallopini is good breaded and quick fried. It only takes a few minutes to cook, and is best served with mashed potatoes and gravy.

There are cheaper cuts like veal shoulder that can be used for stews.

Really, veal can be used in any way beef can--it is just a leaner, younger meat.

Where To Buy Veal

Available in meat departments almost everywhere. Sometimes you have to ask for the exact cut you need for your recipe. Very expensive though. My favorites are Italian dishes like: Veal Picatta, Sautenbocca, Parmesan, Marsala, Francese and the German weinerschnitzel. Do not overcook veal, it is very lean and tender.

Veal parmagan is the best. take veal cutlets (you can buy veal in the grocery store - next to the beef) and pound them very thin. Bread them & fry till golden brown. Sprinkle with parmesan cheese & cover with a slice of mozzerella & spaghetti sauce. Serve with spaghetti on the side - VERY good!

You can only get Veal from very select Butchers. I have never seen it in Supermarkets as it is very expensive.

I'm sure you can find sources for veal dishes online free.
