Glazed Meatloaf
1/2 cup ketchup
1/3 cup brown sugar
1 tablespoon lemon juice
1 teaspoon dry mustard
2 pounds lean ground beef
3 slices bread, shredded
1/4 cup diced onion
1 egg, beaten
1 cube beef bouillon, crumbled
3 tablespoons lemon juice
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth.
In a large bowl, combine ground beef, shredded bread, onion, egg, bouillon, 3 tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed. Form into a loaf and place in a 9x5 inch loaf pan.
Bake 1 hour. Pour off fat. Pour reserved ketchup mixture over loaf. Bake 10 minutes more.

1 lb. ground meat, 1 egg, ketchup, either bread crumbs or oats, and salt & pepper. Sometimes I add chopped onions, that's up to you. Also, you could add chopped bell pepper if you like it. Mix all that together and spread out in your pan. I usually use a broiler pan or cake pan so the grease will have somewhere to go away from the meat loaf. If you use a cake pan you would only spread your meat loaf down the middle. Spread ketchup on top and bake at 350 for around 30 - 45 minutes. Check it after 30 minutes to see if it's done. The time it takes will depend on how thick you made the loaf.

I mix ground beef (and sometimes add in some ground sausage) with some breadcrumbs, garlic salt, pepper, an egg, some ketchup, a couple dashes of Worchesthire sauce and mix it all up and put in a loaf pan. The last 10 minutes I put some ketchup on top with some brown sugar. I don't necessarily follow a recipe, meatloaf is hard to screw up.
For a variation you can use pizza sauce instead of ketchup, but when I make that I spread the raw meat mix out into a rectangular shape, and put some more sauce and shredded mozzarella cheese in the middle, roll it up and place in the loaf pan, add more pizza sauce and cheese on top as it cooks.
For a western style use BBQ sauce instead of ketchup and more brown sugar.

These are individual meatloaves. They're great, because kids love to have their own little meatloaves and they freeze very well.
Mini Meat Loaf Cups
1 egg, beaten
1/2 cup pasta sauce
1/4 cup seasoned bread crumbs
1/2 tea. italian seasoning
1 1/2 lb. ground chuck
6 oz. mozarella cheese, shredded
In bowl, combine egg, sauce, crimbs and seasoning.
Crumble beef over mixture and using hands, mix well.
Dividing mix between 12 greased muffin cups or cupcake pan, pressing onto the bottom and up sides.
Fill the centers with cheese.
Bake at 375* for 15-18 min.
Drizzle with additional pasta sauce and serve immediately.
I'm sure your family will enjoy this as much as we do.

Surprise meat loaf
Mix 1 c. evaporated milk and 2 eggs in large bowl: beat with rotary beater until blended.
Add 2 c. soft bread crumbs, 2 lbs. ground beef, 2 tbsp. finely-minced onions, 2 tsps. salt, 1 tsp monosodium glutamtae. Mix lightly. Melt 4 tbsps. butter. Add 4 tbsps. flour, 1/2 tsp salt, 1/16 tsp. pepper stir to smooth paste.
Combine 2/3 c. evaporated milk and 1/3 c. cold water. Add to flour mixture and cook, stirring constantly, until mixture thickens and comes to boil.
Remove from heat. Stir in 2 c.cooked rice and 1/2 c. crumbled cheese, reserving 2 tbsp. from the 1/2 c. cheese for topping.
Spoon 1/2 meat mixture into 9x5x3x-in . loaf pan. Top with cheese rice layer. Smooth evenly. Cover with remaining meat mixture spreading evenly.
Palce pan in shallow metal foil apn to each any drippings during baking. Bake in moderate oven 350 F, for 75 minutes.
Allow to stand 10 minutes. Invert on warm sering platter. Sprinkle with 2 tbsp. cheese. Serve 8

I made meatloaf last night-it was awesome! 1.5 lbs. ground beef (I use lean or you can use ground turkey), 1 egg, 1 cup italian style bread crumbs, 1 tsp. basil leaves, 1/2 8oz. can of tomato sauce, salt & pepper to taste. Cook in oven at 350 for 45 min. Then add the remaining tomato sauce to top and cook for another 10 min. If you'd like, you can then add some parmesan cheese and cook for another 5 min. Yummy!! Has a lasagna like taste to it and sooooo good!

My Grandmother taught me to make meatloaf. She used a mix of beef, veal and pork and added cooked rice and an egg. She also added some Parmesan cheese. She baked it covered with foil and then for the last 5-10 minutes she pored a can of stewed tomatoes on top and continued cooking. Then she made a big batch of mashed potatoes.
It is incredible!!!!
