Sadly unless you book a poker-oriented cruise they usually don't have poker tables in the ship's casino. Poker doesn't make a huge amount of money for a casino compared to slots and roullette and the like, so because they have such limited space they tend to fill it with machines. I tried on my cruise to set up a poker game in the card room among the passengers but it didnt take off. Your best bet would be trying to put together a private game.

I was on Mariner of the Sea and sadly there is only one limit table. There are no huge demand for poker on a cruise. But they did have one poker tournament on the way back. Be aware, there are a lot of amateurs in play, and blinds go up real quick, so everybody is forced to gamble. You best bet would be to find enough people who is interested and demand to have at least one table set up. When you on a cruise, you are the 'king'. The cruise line will try their best to accommodate you.

I was on Vision of the Seas last October. They had one "poker table". It was either $5/$10 or $10/$20. I don't remember.

In all the times I walked by, I never saw anyone playing. I never even saw anybody who looked like they wanted to play.
