all the science says olives are good for the old ticker and the old pipework but do the benefits diminish when they are pickled in a jar? obviously the 'fresh' (usually from the deli counter) have a shorter shelf life. so are pickled olives significantly different nutritionally? thanks

just to clarify - I'm comparing the olives in jars filled with vinegar with the ones not sold in jars and usually with herbs and cheese cubes I refer to as 'fresh'

The supossed health benifits come from the olive oil. How they are packed will have very little effect on this. Whether packed in vineger, usually green, or in water won't make much difference in the oil content of the olive since the oil is not water soluable. Oil packed olives however are sometimes packed in plain vegatable oil which probably won't affect the oil in the olive but will add calories.

Olives are not actually pickled, they are immersed in brine and olive oil for a period of time, that would apply to either the ones on the deli counter or the ones in the jar. Its just a matter of taste.

Olives and Pickles style no longer something alike. i admire black olives yet no longer eco-friendly ones, and that i haven't been able to eat dill pickles in view that i replaced into 10 and ate an entire jar and puked for hours.....once I eat or drink something then throw up, i'm no longer able to in any respect have it back. that's why i can no longer drink Southern convenience, Vodka, JD, Jim Beam, Beer, and so on.

Fresh olives are inedible. They have to be pickled, marinaded or treated with caustic soda before they are OK to eat.

They are foul no matter what you do with them. Just throw them out.
