You didn't say how many servings you needed. Well, here goes.....
Cucumber Salad for one
1 large cucumber
1/3 purple onion
1 small tomato
Zesty Italian Dressing in a bottle
Bring a small sauce pan of water to boiling. Cut an x on the bottom of the tomato and drop it into the boiling water for a minute. Remove and put into ice water to stop the cooking.
Pare the green peeling from the cucumber and cut in half. With a serrated grapefruit spoon, scrape out the seeds from the cucumber. Coarsely chop the cucumber into mouth size pieces. Scoop up and put in a medium size bowl.
Peel the tomato and squeeze out the seeds; cut into mouth size pieces. Add to the bowl of cucumbers.
Peel and chop 1/3 of the purple onion. Add this to the cucumber and tomato mixture.
Add as much of the Zesty Italian salad dressing to the salad as you desire and stir well. Serve.

Cucumber Salad From Food Network Kitchens
3 medium cucumbers (about 2 1/4 pounds), peeled, halved lengthwise, and thinly sliced
2 tablespoons kosher salt
1/4 cup plus 2 tablespoons sour cream
3 tablespoons chopped fresh dill
1 tablespoon white distilled vinegar
Pinch of cayenne pepper
Freshly ground black pepper
In a large bowl, mix the cucumbers and salt and set aside at room temperature for 1 hour.
In a colander in the sink, drain and rinse the cucumbers thoroughly under cold running water. Set aside to drain for 10 minutes.
Press down on the cucumbers to extract as much liquid as possible. Transfer the cucumbers to a large bowl and mix with the sour cream, dill, vinegar, cayenne, and season with pepper to taste. Serve immediately, or cover and refrigerate for up to 24 hours.

Yet another option is to soak 'moong dal' (A type of lentil) or gram dal overnight, and mix it with grated cucumber and salt. If you have some, add freshly grated coconut and sliced green chilies as well, it turns out really cool!

Cucumber Raita, an Indian dish.
Peel and de-seed the cucumber and cut into small pieces,
add to a quantity of yogurt sufficient to cover the cucumber, perhaps add a little salt or curry powder, let stand for a while and serve cold.
You can also add chopped mint, chopped coriander or chopped parsley to the dish, depending what you serve it with.
