Because "whose heart is snares and nets and her hands as bands" is describing the woman that he finds bitter. This is not a description of all women, merely Solomon stating that women of this sort he finds "more bitter than death." And having been married to a woman like that, I can wholeheartedly agree.
Take out that comma between 'woman' and 'whose'. It isn't there in my KJV, or the other two Bible translations I have sitting at my desk with me. This passage of Ecclesiastes is written in prose, and the comma only denotes that the second part of the sentence is the next line in the poem. When you take it out and read the sentence as a sentence, it changes the meaning to what it is supposed to be.

That's not talking about all women. This is the seductress about whom Solomon warns young men in Proverbs 2:16-19; 5:1-14;6:24-29;7:1-27. Elsewhere, Solomon exalts the virtue of mans lifetime companion in Ecclesiastes 9:9,Proverbs 5:15-23;31:10-31.

I think it's a spelling mistake and should have been,'better then death',which sounds quite acceptable.Given a choice between a woman and death, most men would prefer the women.The type of women mentioned above are different and let them be called by whatever name one wants.On the (W)HOLE.women are quite respectable in the Bible.

WHAT THE VERSE *IS* SAYING:
He finds that *particular* type of women, whose hearts are as snares and nets and whose hands are as bands, more bitter than death.
That clear it up for you?
EDIT:
BTW, this is coming from Solomon, who had hundreds of wives, many of them who worshiped other gods and eventually dragged him down to do so also. That's the type of woman he is speaking of from experience.
