Joy of Cooking has a pretty good one, but here is how our family has modified it.

Sauce - a good 26 -29 oz. jar sauce is fine.
Shells - this filling makes enough for 1/2 box, but can be doubled. 1/2 box fills one 9 x 13 baking dish. Boil shells to al dente as indicated on box. Drain and then run cold water over them to chill. Drain again.
Filling: Mix together -
3/4 lb. (12 oz.) Ricotta Cheese
1/3 lb. (5 1/3 oz) Mozzarella Cheese - shredded or grated
1/2 lb. (8 oz.) Parmesan Cheese - shredded or grated

Spread a layer of sauce in bottom of pan. Fill shells with cheese mixture and line up in rows in the pan. Top with some more sauce. Cover with aluminum foil. Bake 40 minutes in 350 F oven. Let stand 5-10 minutes before serving.

The proportions on the cheeses don't need to be exact. I also sometimes add in parsley for a little color, but we don't care for them with spinach added.

Heat remaining sauce, or an additional jar, with Italian Sausage Links that have been cut in half and browned separately. Serve extra sauce with the stuffed shells.

STUFFED SHELLS WITH CHEESE STUFFING

12 oz. shells
1 1/2 lbs. cottage cheese or ricotta cheese
1 (8 oz.) pkg. Mozzarella cheese finely diced
2 eggs, slightly beaten
1/2 tsp. salt
1 tsp. chopped parsley
1/4 c. grated Parmesan cheese
3 c. tomato sauce or meat sauce
1/8 tsp. pepper

Cook shells in boiling salted water for 12 to 15 minutes. Drain well and dry in a single layer on paper towels. Combine ricotta and Mozzarella cheeses with eggs and blend with salt, pepper and parsley. Fill the shells with the cheese mixture. Spread a thin layer of sauce in a baking dish. Place the stuffed shells, 1 deep, in the baking dish and top with balance of sauce. Sprinkle with grated cheese and cover with a sheet of aluminum foil. Bake in a 350 degree oven for 25 to 30 minutes.
The following meat stuffing may be stuffing may be substituted and used with your favorite sauce:


1 c. bread crumbs or 3 slices moist bread
1 egg, slightly beaten
1 minced onion
Salt and pepper

Stuffed crabs

15 crabs
1/2 kilo potatoes
5 piece tomatoes
1/8 tsp pepper
1-1/2 pieces onions
1 head garlic
3 eggs
Salt to taste

Biol Crabs, flakes but keep the shells. Dice potatoes into thin pieces. Saute garlic, onion, tomatoes, and potaotes. Add flaked crabs. Season with pepper and salt. Stuff mixture into shell. Beat whole eggs: dip stuffed crabs into beaten egg and fry till golden brown. Will serve 15 poeple.
