French Dressing
2 tbsp vinegar ( cider ot wine) or lemon juice
6 tbsp. olive oil or salad oil
3/4 tsp. salt
1/8 tsp pepper
1 clove garlic finely minced
1. Combine all ingredients in a jar, cover tightly and shake vogorously to blend well.
Variation: The following may be added to bacis french Dressing:
Anchovies- 2 tbsp. finely cut or chopped
Curry- 1/4 tsp. powder
Herb- 2 tsp chopped parsley,
1/4 tsp crumbled dried basil or tarragon
Mustrad- 1/2 tsp. dry mustard
Chili- 2 tbsp chili sauce
Blue- 2 tbsp crumbled roquefort or danish blue cheese
Fruit- 1/4 cup honey or 1/4 tsp grated orange rind.
Preparation time: 5 minutes
Makes 1/2 cup french dressing

Here are a few salad dressings that I make all the time.
For Almond-Orange Salad, whisk together:
1/4 cup Salad Oil (canola or veggie or sunflower)
2 Tbs. Sugar
2 Tbs. White Wine Vinegar (or champagne vinegar)
1/4 tsp. Almond Extract
Normally served on salad with romaine, celery, green onions, toasted almonds and mandarin orange sections, but it's also good on any mixed greens.
Citrus Dressing for Salads, whisk together:
1/3 cup fresh Orange or Grapefruit Juice
2 Tbs. Balsamic Vinegar
1 Tbs. Olive Oil
Salt and Pepper to taste
Celery Seed Dressing from Golden Lamb Restaurant in Lebanon, OH
Combine and mix well:
1/2 cup Sugar
1 tsp. Salt
1 tsp. Dry Mustard
1 tsp. Celery Seed
1/4 cup Red Wine Vinegar
Slowly add: 2/3 cup Salad Oil
Continue beating until thick. (I use a rotary beater.)
Keep cool/refrigerated. Great on Spinach Salad or lettuce salads.

ITALIAN GARLIC VINAIGRETTE
3/4 c. olive oil,
1/3 c. red wine vinegar
2 cloves finely chopped garlic
1/4 c. chopped fresh parsley OR ¼ tsp. dried parsley
1/4 tsp. black pepper
Mix all the ingredients in a bowl and pour over salad. Toss well.
Avocado Dressing
1 large ripe avocado, peeled, mashed
1/2 cup dairy sour cream
1/4 cup milk
1/4 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon garlic salt
2 drops hot pepper sauce (optional)

Make the salad. Then pour about 6 table spoons of olive oil on it, mix to coat it evenly. Add spices that you like. (Garlic, pepper, paprika, turmeric, Chile powder) mix well and either squeeze half of a lemon on it, or half of a lime, or half of a grapefruit, or 6 table spoons of balsamic vinegar or apple cider vinegar, or a good Marsala on it.

LOW CALORIE SALAD DRESSING
1 (7 oz.) pkg. dry ranch style salad dressing mix
1 c. buttermilk
1 c. plain low fat yogurt
Mix ingredients until smooth to creamy. Refrigerate several hours before serving. 10 calories per tablespoon

1.5 tablepoons of oil (olive oil, vegetable oil, chili oil, etc.)
1 tablespoon of acid (lemon juice, pomegranate vinegar, etc.)
2 tablespoons of fresh chopped herbs
This basic recipe is a lot of fun to experiment with.
