Put things in the slow cooker--like beef stew, pot roast, homemade soups, roasted chicken, pork chops with mushroom soup or stewed tomatoes over them, meatballs with rice and tomato sauce over them, etc. Get a slow cooker recipe book. The meals can be ready to serve if he gets home a little early, or you can put them on warm to keep them hot if he gets home a little late. You can have a salad ready in the fridge, or you can pop a dinner roll in the microwave to go with his main dish. All healthy & good luck.

ok i have a great idea. ok lets see. when he comes home you can cook ( on the stove) some slices of peppers. get a lot. then add some tomato sauce. and then mix it and it will taste soo good. and it is really healthy. my mom makes it 4 me and it tastes good. get some bread and you can dip the bread in the tomato sauce. it tastes good. also when your done makes it give it to him and don't forget to peel the skin off pepper cause it can irritate ur stomach. well it does to my mom. also if you don't want to cook that then you can make some Alfredo noodles or soup. here is another recipe
Get some potatoes. Slice them in half. Put them in the oven until they are cooked. When you slice it you can see the inside. When its done cooking they're will be a skin over where you sliced it. Then you will know it will be done. ask him how much slices of potatoes he wants. If he eats a lot and he's hungry then get 5 potatoes and slice them and if their will be leftovers then put them in the fridge. When he eats the potatoes then he can put some sour cream, salt, and shredded cheese over it. It would be best to just put soar cream so their isn't too much salt or cheese. Also so it won't be too dry. Don't give him soda to drink when he eats dinner give him milk or orange juice or something besides caffeine or soda. Hope I helped. gosh i typed a lot and my hands hurt. You can cook almost any casserole dish and warm it up for him later. Serve a salad too. It can be prepared earlier, and placed in a zip lock bag to keep it fresh. Do not add salad dressing until serving. Meats in sauces can be reheated, such as meatballs or roasts, ribs, etc. Make an easy, light, dessert. He doesn't have to miss out on a good dinner just because he gets home late. Cook your evening meal, and warm it up for him when he comes home.

How about preparing food in advance? Make sauce and macaroni...store separately and then put macaroni in hot water in microwave for a few minutes to heat up and toss with some sauce for quick spaghetti dish. Or Pre-made quiche..cut it up and freeze indiviual slices. Take out what you need, thaw and bake in toaster oven. My favorite: grilled chicken. Make extra and toss in a salad the next day and then make chicken salad with mayo on the 3rd or 4th day...3 meals from one night of BBQ'g (made on a night when you had the most time to BBQ it). An antipasto salad, with lunch meats, cheese, tomatoes and lettuce is a possibility. Or if you have an indoor grill, grill some chicken or fish. If you like shrimp, saute some shrimp with garlic and tomatoes and serve over pasta. None of those meals take a lot of time to prepare, and they are quite good.

As long you have atleast 2 hours or between dinner and sleep it is healthy. If not try to prepare lighter meals like fruit smoothie, or fruit salad(waldorf salad). Other light food items would be some rice dish, with vegetables, or make chopped carrots, broccoli stalk, cabbage(red and green), and make coleslaw(refer Wolfgang Puck's recipe, boy that is yummy and healthy). Try to avoid heavy items like Meat, and other items, as they take longer to digest(thats my dietician's suggestion and my personal experience). Cheese, meat and other items tend to stay in your stomach like a big pile of rocks. A healthy meal should make you feel 'you are not hungry anymore' at the sametime your stomach is lighter.

Anything in the crock pot is great, put it in the morning and it cooks all day for when he gets home. You can cook roast with potatoes and carrots. Or even there is crockpot packets you can buy that has everything but the meat.
Getting a rotisserie chicken every now and then is really easy as well.

fowl fills you up extra acceptable than a salad. How some beneficial fowl sandwich with mayonnaise and an olive! And milk, not water. Milk is thicker, filling you up speedier. I'd recommend something light such as a salad (with meat on top). Keeping the meal light would be a good idea, especially if he goes to bed shortly after eating that meal.

Most meals you want to make can be done in advance, I do it everyday for my brother and myself. I eat mine at dinner time he eats his for lunch the following day.
From experience do fish, eggs and somethings I can't think of which don't m/w very well.
When he gets home tell him to m/w it himself or you can do it for him and give him a cold beer or a cuppa.
