Actually, it is an old fashion custom that is not particularly followed anymore. White was generally only worn in the summer up until about the 1960's or so. Then it started being worn pretty much whenever you liked. Since Labor Day is considered the 'end of summer' it was considered 'bad form', especially by the well-to-do and especially on the east coast of the U.S. to wear white anytime after that, since Summer was over, never mind what the calendar or the weather might say!
White, at one time, was only worn by a bride or a baby about to be baptized as it represented purity and innocence. Of course, that has not been the case for centuries...

This rule is often misconstrued. The rule was originally no white *shoes* after labor day, not white clothing. And that mainly applied only to pumps and dress shoes, not casual shoes. Most people feel that this has something to do with the temperatures and the fact that white reflects heat while dark colors absorb it. I would wager that it also has to do with the unspoken color changes during the seasons. Spring & summer tend to be full of light, bright colors whereas autumn and winter feature more subdued, darker colors. No matter what colors go in and out of vogue this pattern still exists to some extent. Labor Day is seen as the beginning of fall, hence, time to break out the autumn tones again.
And in thinking about this rule as it applies to shoes, if you notice you still don't often see white high heels or pumps in the store past a certain time of year, just as you don't see strappy sandals or suede boots past a certain time of year.

Harpertara has explained it best, with the exception that it was around 1970 those rules went out the window, along with rules about which types of dresses and fabrics were worn before 5:00 P.M. and what was worn after 5 P.M., ie: the "after 5 dress", the cocktail dress, etc.
